Ahhhhhh Christmas is right around the corner and I’m so excited to share with you a new fancy (but super duper easy) recipe that I created a few weeks ago. I had so much fun developing this vegan cranberry sauce recipe- it’s one of my favorite new condiments and when I posted a picture of this right out of the oven on instagram back in November, all of you went crazy for the recipe. This is a gluten-free cranberry sauce, as well, so you can feel good about serving this pretty pink dish to your whole family. Plus, it’s not loaded with corn starch, soy, refined sugar and any of the other junk that you find in typical cranberry sauce recipes–or store bought varieties.
So, just in time for your Christmas soirees, family gatherings and holiday dinners…this cranberry sauce is sure to be the star of your table…I know it will certainly make an appearance on mine! It’s perfect for adding to roasted vegetables as a condiment as well as a side dish for your mashed sweet potatoes. It’s also lovely served with any type of proteins you may be making such as organic turkey or organic chicken. Get creative and display this cranberry sauce in cute little jars (like the ones pictured) for appetizers to spread onto gluten-free toasted bread and whole grain crackers.
It’s sweet and tart without the stickiness of traditional cranberry sauce and the beauty of this recipe is that you won’t be left with a saucepan that’s sticky and hard to clean. All you need to do is line a rimmed baking sheet with parchment paper and roast away! Easy clean up and easy to make- now that’s a Valpone recipe, if you ask me!

Ingredients
- 1 cup fresh cranberries
- 1 large Fuji apple chopped
- 2 Tbsp. unsweetened cranberry juice
- 2 Tbsp. pure maple syrup
- 1 pinch sea salt
- 1 pinch cinnamon
- 1 pinch fresh thyme leaves
- 2 orange slices
Instructions

Preheat the oven to 375 degrees F.

Combine the cranberries, apple, cranberry juice, maple syrup, salt and cinnamon in a large bowl and mix well. Transfer the mixture to a large rimmed baking sheet lined with parchment paper. Spread out the mixture in a single layer and top with the thyme and orange slices.

Roast for 30 minutes. Squeeze the orange juice from the two orange slices on top and mix well. Discard the orange slices. Transfer to a bowl and let the mixture sit for 30 minutes or until the flavors meld together.

Serve.
So nice to have a cranberry sauce recipe that isn’t filled with a broken much of sugar! I like the addition of thyme too. Yum! 🙂
