These cookies are super cute and full of fun.
Plus, they’re easy to whip up in your food processor and they’re completely raw, meaning there are no eggs and there is no baking involved. That’s right- no oven needed for these babies! Perfecto for summer.
And, as always this recipe is free of gluten, dairy, soy, corn, eggs and refined sugar. That means you can eat the raw dough and not feel guilty about it, hehe.

I’ve been making these thumbprint cookies for years – when all-purpose flours started to hurt my belly and xanthan gum and those other awful binders bloated my stomach like crazy, I decided to explore the world of simple no-bake baking. And surprisingly, I discovered a million ways to match your sweet tooth without having to use any processed flours or binders.
These cookies are so cute and they’re perfect to serve anytime of the year but summertime is ideal when made with fresh jam.
The best part?
They take about 10 minutes to make. No joke. So when you have last minute company coming over unannounced or you are wracking your brain trying to think about what to make for the dinner party you’re attending this weekend, you can simply toss these babies together- add a spoonful of jam and you’re all set.
Simple as that.

I made these cookies a few months ago for my family and they forgot to serve them because they were in the fridge (thanks Mom!)… I think it’s because they wanted to eat them all themselves. Haha. My Uncle Mike (aka my cookie monster) wasn’t able to try them since they weren’t served but I know he’s reading this right now and wishing he had. I guess I’ll just have to whip these up again soon so my entire family can enjoy them.

Ingredients
- 1 cup gluten-free rolled oats
- 1/2 cup raw almonds
- 3 Tbsp. coconut oil
- 2 Tbsp. water
- 1 tsp. pure vanilla extract
- 1 pinch sea salt
- Raspberry jam no-sugar added, for serving
Instructions

Combine all the ingredients except the jam in a food processor until very smooth and a dough consistency forms. Remove the dough from the food processor and roll into 8 small balls.

Use your thumb to make an indention in the center of the balls. Before serving, fill each hole with a small spoonful of jam.

Serve or store in the fridge until ready to serve.

Can they be adapted to be made with Almond flour? Or does the flour need a binder?
