Eggs are by far my favorite breakfast.

They’re just so darn good.

Aren’t they?

I can remember when I was a young girl and my mother taught me how to make sunny side up eggs – I thought I was so cool.

I invited my grandma over just to make ’em for her – and they were a bit too runny and under-cooked but I was still proud.

Then came the hard boiled eggs.

And deviled eggs.

And then omelets.

Then frittata.

And egg bakes.

But just recently I thought… why not make some cute little egg muffins?

Actually my muffin tin was staring at me screaming, “Please use me.”

So I did.

I made this fun lil’ easy egg recipe just for you.

And me.

Because it’s perfect for the kids when they’re in a rush to catch the school bus…

And convenient for you to pop into your mouth before you head out the door for work…

(Coffee does not count as breakfast, people. I repeat, please eat something.)

They’re also perfect to toss into a Ziploc bag and enjoy with a dollop of guacamole when your hunger strikes at 3PM.

Do the kiddies need a little snickity snack before soccer practice?

Hmmmmm.

How about a bite of these protein-packed babies?

A little bit of egg, some fresh herbs, carrots, cherry tomatoes and you’re all set.

Like I said, the key word here is Easy.

O, and they’re pretty gosh darn tasty too.

Mini Morning Egg Bites

Ingredients

  • 10 ounces fresh baby spinach cooked
  • 1 large Roma tomato diced
  • 4 whole large eggs
  • 4 egg whites
  • 1 medium Vidalia onion diced
  • 2 Tbsp. finely chopped fresh parsley
  • 2 Tbsp. chia seeds
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground white pepper

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium sized bowl, whisk eggs with egg whites. Add remaining ingredients; mix well to combine.
  3. Prepare a muffin tin with nonstick baking spray. Pour egg mixture evenly into cups.
  4. Bake for 30 minutes or until set. Remove from oven; set aside to cool.
  5. Serve warm or place in the refrigerator for up to 5 days and serve for a quick breakfast or snack.

  1. I am a college student and I am always looking for quick/easy/affordable breakfast ideas! I am definitely going to try out a batch of these this week and put some in the fridge. Question though-if you refrigerate them and then wanted to heat them up, are they still good microwaved? And if so about how long would you put them in for?

    1. I don’t use a microwave and I don’t recommend it for this recipe; they will blow up in the microwave; ha. Try the oven! Or a toaster oven. xox

    I found your website quite by accident when looking for a recipe and boy am I glad I did. Having recently started on a Low Carb diet to help with controlling blood sugar I have struggled to find good (and simple) recipes that had options for people who struggle with wheat intolerance. I am not allergic to wheat and I don’t have celiac — I just find that if I keep my recipes as wheat free as possible that I have less inflammation and less problems with my Chron’s. It is tough having Diabetes, Lupus, and several other medical issues and trying to feed myself. Finding sites like yours does help.
    I love eggs and eat them daily. These muffins look amazing. I will be trying them in the morning. Too bad I don’t have any Chia seeds. For now, until I can shop I will be subbing in Sunflower seeds. But I am sure I will try the Chia seeds soon. Thanks for all you do. I enjoyed reading your story.
    I was told for 2 years that I had “it is all in your head-it is” before they diagnosed the Lupus. Later they told me my pancreas quit working and I needed insulin.

  4. Oh Amie, I’m all distraught. I’ve experiencing a sorrid mix of leaky gut, candida, inflammation in gut and a tremedous amount of anxiety/constipation . My doctors are of no help and I can’t afford any other services. I feel like everything is hopeless. I’ve read some of Tina’s site at carrots n’cake and she is undertaking SCD, and a friend of mine mentioned folowing a meal plan as suggested by Dr. McComb or paleo-esque. But I can’t bear to do that, neither do I have the time.

    The very distraught thing is that I am unable to afford any of the supplements that I think would truly help me. If I dont do a real legitimate cleanse and if I cannot afford supplements, can I still heal myself? Please give me some hope because I need to know that if I do baby things all will not be lost. I simply don’t have money for supplements or cleanes or radical diets or programs. I just need some hope that I still heal myself somehow 🙁

      I am so sorry to hear you are in pain and feeling sick. I was there just last year and dealt with the pain for so long and felt like no one was helping me. I remember waking up everyday working with 20 doctors all from different hospitals and none of them were helping me or were even trying to help me besides put me on pain killers. Keep your head up and stay positive. You will find an answer; I will surely keep you in my thoughts. Enjoy your evening and get some rest!
