I’m still in Love with my food processor. So, I thought I’d create a fun dish that I can store in the fridge for the week ahead with breakfast, lunch, dinner and snacks.
Over the weekend, I got to thinking, I love my chicken and veal has such incredible flavor so why not combine the two? I wanted to keep it relatively simple, so a dash of sea salt n’ pepper along with paprika was all the spice I needed. My favorite fresh herb, curly parsley added the perfect touch of natural sweetness and I was all smiles.
I created this pate for my lunch on Saturday and enjoyed it atop my french onion soup along with salsa. I stored the left over pate in the fridge and enjoyed it with dinner atop a spinach and arugula salad with roasted vegetables. Then, arose the next morning to enjoy it with my eggs and toast.
Now, there is only a lil’ bit left, and what am I doing? Using it as a dip, of course.
I’m enjoying this pate with my gluten-free crackers and it’s delish.

Parsley Chicken Pate
Ingredients
- 2 lbs. chicken breasts
- 1/2 lb. veal
- 1 cup parsley, roughly chopped
- 1/4 tsp. sea salt
- 1/6 tsp. freshly ground white pepper
- Pinch of paprika
Directions
- In a food processor, combine all ingredients; pulse until mixture forms a smooth pate texture.
- Transfer to serving dishes.
- Serve with crackers, pretzels, atop sandwiches, salads or soups.
- Enjoy!
It was perfect for a weekend lunch.
And dinner.
And snickity snacks.
Whether you enjoy this atop salads, toast, sandwiches, bagels, served with eggs or even paired with crackers, this pate is easy, quick and simple to create and I’m just lovin’ it.
Now, I’m ready to make some more.

It’s quite interesting…eating yucky, processed, packaged foods can leave you feeling yucky… just like a rainy, sleety, snowy day (like Saturday here in Manhattan) leaves you feelin’ cold and not so peppy, a sunny, Spring-like day (like yesterday here in Manhattan) makes you feel fabulous n’ sunny inside.
Doesn’t it?
