Happy New Year ~ I hope everyone had a wonderful holiday season and a lovely New Year’s! I know you’re all excited to try these homemade potato chips, aren’t you?
I thought so!
Do you know how to make homemade potato chips?
I honestly didn’t know how until a few years ago. It’s pretty easy!
1. Eat Simple. Eat Organic. Just Eat Real Food.
I have a very simple ‘food’ lifestyle – NOT a diet. No sugar, gluten, processed foods or dairy. But lots of organic veggies, healthy fats, and fruits.
2. You Don’t Need Things.
3. You Can Do It.
4. Learn About your Childhood.
You heal yourself when you forgive. And you forgive by imagining the person who has hurt you, as a child and understanding what life was like for them as a child. I’ve forgiven many people in my life. Was it easy? Heck no. I forgave my ex-boyfriends who cheated on me and broke my heart. I forgave my bosses at VOGUE for being awful to me. I forgave my father for making me cry throughout most of my childhood and even my adulthood – not because he was mean, but because he wanted me to be perfect, and well, I’m just not perfect… none of us are. So I forgave him. And that was probably the hardest thing to do. He still doesn’t ‘get’ me but I’m over it… it’s not worth me wasting tears and living in pain for someone’s issues – when they take them out on little ol’ me. This all happened in November of this year. I think I cried every time I meditated and repeated this forgiveness but it worked and it escaped by body and now I’m sure to keep it outside and not let it back in… because as we all know, there cannot be love where there is fear. Again, I chose love over fear and I remind myself to do this every single day with everything I do and every decision I make.
5. The Right Things Take Time.
Nothing happens overnight. Everyone has their ups and downs and everyone has their own stress, fears, etc. but if you stay positive and look towards the light instead of the darkness, the right things will fall into place… they just take time.
6. The First and Last Hour of Each Day Are My Favorite.
I start my day with dandelion tea, journaling and meditation. I finish my day with an epsom salt bath and thinking about everything I’m grateful for.
7. Love Yourself.
Everyday when I wake up, I ask myself, ‘How can I love myself today?’ You have to FEEL this for it to make sense to you and to understand it. Our daily stressors are all about creativity being blocked. Women feel torn up by the pressure to be everything for everyone and to please everyone – this is what blocks our creative self and what causes so much of our stress each day. Unblock your life and let love in. Let the light in. Just close your eyes for 20 seconds and see the white light, then go on with your day.
What are your New Year’s Resolutions?
Now go enjoy these potato chips! Try to buy everything organic. Here’s why: The Benefits of Eating Organic.

I found your site while googling how to make my own salt and vinegar chips, and ended up finding so much more than I expected. I’m currently living in Manhattan and working in the fashion industry as well, and every day it takes so much forgiveness just to survive the toxicity. Thank you for providing this resource and your insights, it gave me the realization that I don’t have to exist in this negative environment forever.
Yay! xox Hugs. Thanks Amanda!
So much of what you said is true! There is no need to stress, there is a greater power! Relying upon the Lord makes my life so much easier. Wow, no burdens when I know that He will turn all things for good and His glory. Awww…thankful for His perfect love and His perfect balance and direction in my life!
Thank you for your encouragement.
Blessings,
Kriss
Thank you Kriss; so nice to hear from you! xoox Hugs!
I’ve cleaned out my email inbox many times since I rec’d this post, but I kept (and keep) it “front and center” b/c it spoke to me so clearly. I’ve never heard any health/food blogger speak about the need to “learn about your childhood” and forgive for maximum personal health — thank you so much for stating this and your other tenets so clearly.
These look amazing! I’m going try try them this weekend 🙂
Your website is lovely and I cannot wait to try out some of these vegan-friendly recipes! These potato chips sound so yummy.
I’m hoping to be the lucky winner of a BlendTec Blender. It would be such a welcome addition in my home since we make smoothies at least once a day. Please pick me! <3
Thanks for a super inspirational post! It is hard sometimes to think of myself and take care of me. I have been on my new “foodstyle” for a year and have grown to love it. These potatoes jumped right out at me because salt and vinegar chips are my favorite! Cannot wait to try 🙂
Hi Amie,
I’m going to try this recipe in a few hours using sweet potatoes. However, I like to point out that your list forgets to mention garlic powder. How much 1/4 tsp.?
Thanks Eric; yes 1/4 tsp. thanks!
These recipes you share are amazing , the Gluten-Free Baked Salt & Vinegar Potato Chips look delish , and would love to try these , what a great healthy snack to enjoy … thank you

My New Year’s Resolutions include eating organic & eating clean. Can’t wait to try these recipes!
I, too, had a difficult relationship with my father. After my son was born, and my father was in the process of dying, we reached an uneasy peace. But at least when he died, we had come to a place of calm acceptance. Thank you for the insight and sharing.
Thank you so much for sharing Karen; so nice to hear from you. Thank you. xoxo Sending you a hug! I have heard from SO many women via email and my website from this post who have similar situations with their fathers. Thank you!
I love all of your posts and recipes!!! 🙂
I love all the pretty spices and salts!
Struggling with a forgiveness issue right now and this is another timely reminder–second one today. There are no coincidences! Thanks for your insight and your way of saying things…just for being who you are! And the chips? Oh yeah!!
Hang in there Lisa! Sending you lots of love from NYC!
Well written, you go girl! And the potatoes look super delicious!
this is such a beautiful post! all of these points are SO true, and i need to make more of an effort to keep them all at the top of my own priority list, too.
not to mention, these chips look SO delicious!
Thank you Marlies; so glad you liked it! xxxoo
LOVE this! It is so important to forgive. I have a similar issue with my mom, and I’m still working on forgiving her.
Thank you Brittany; sending you lots of hugs!!!
Funny, my girl friends and I were just talking about meditation yesterday and how all of us need to prioritize it. There’s a lot to be said for clearing your mind and washing away all the noise in order to be fully present.
Very inspirational post, as always! I love your suggested new year’s resolutions and definitely need to put all of them into practice. I also need to put these chips into practice – they look amazing! Salt and vinegar has always been my favorite! 🙂
Thank you Julia; so happy to hear that!
Your post rings so true with me Amie – well being is not just about healthy eating – mental attitude and forgiveness are so much a part of it.
Awe; thank you Jeanette! So kind of you. xoxx
I LOVE the notion of waking and immediately thinking of self-care.
It’s what I do.
It’s how I live.
I PRAY it’s how my child follows suit.
Thank you! Sending you lots of loving hugs from NYC. xoxx
