These tasty muffins pack in a load of antioxidants from the dark chocolate as well as the creamy, rich taste of the avocado.  Avocado is considered the world’s healthiest fruit because  of its nutrient contents such as Vitamin K, dietary fiber, folic acid, Vitamin B6, Vitamin C and copper.  Moreover, avocados provide us with ‘oleic acid,’ a monounsaturated fat that may help lower cholesterol.  So, go ahead and dig in to these healthy, tasty muffins!

Ingredients

  • 1 ripe avocado
  • 1 1/2 cups whole wheat flour
  • 1/2 cup melted dark chocolate
  • 1/3 cup unsweetened coconut flakes
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup honey
  • 3/4 cup almond milk (can also use soy milk, rice milk, hemp milk or coconut milk)
  • 1/3 cup olive oil
  • 2 tsp vanilla extract

Directions

  • Pre-heat oven to 350 degrees.
  • In a large bowl combine melted chocolate, vanilla, oil, milk, avocado and honey.  Puree until smooth.
  • In a separate bowl mix together flour, coconut flakes, baking soda and baking powder; mix well.
  • Mix the avocado puree with the dry ingredients; mix well.
  • Pour into muffin cups and bake for 20 minutes or until done.
  • Enjoy!

    After a lot of search I finally found some really good quality chocolate, Lindt. It was quite expensive but I figured it would be very well worth it. I baked these muffins this afternoon for tea with some friends of mine. and let me tell you, OMG! These muffins are like heaven, chocolate-y moist heaven! I couldn’t stop eating these and neither could my friends! They loved them so much they couldn’t stop asking me for the recipe. I told them about your blog and the amazing recipes you have! First I just want to say that I really love your blog and your recipes sound so decadent, interesting and healthy at the same time! 😀 So, I’m really interested in making these muffins, they look absolutely delish! I’m just having an issue, though.. I can’t get my hands on good quality chocolate, they all are packed with sugar. Is it possible to adjust the recipe so that I can use cocoa powder instead of the melted chocolate? I can’t seem to know how to adapt it.. Could you help me with this?     1. I’m so glad you’re interested in baking my tasty avocado muffins…they’re one of my favorites! Yes, you surely can use cows milk, I unfortunately am lactose intolerant, therefore I cannot use cows milk, but I have friends that use cows milk for this recipe and the muffins taste delish. This recipe makes 12 muffins. Enjoy and let me know how you like them.

    1. These were outstanding! I’m wary of “healthy” desserts, but these were rich and decadent. You can’t taste the avocado at all! I added some cacao nibs for a bit of an extra crunch. I would recommend these to anyone! Any more chocolate desserts up your sleeve?
