These tasty muffins pack in a load of antioxidants from the dark chocolate as well as the creamy, rich taste of the avocado.  Avocado is considered the world’s healthiest fruit because  of its nutrient contents such as Vitamin K, dietary fiber, folic acid, Vitamin B6, Vitamin C and copper.  Moreover, avocados provide us with ‘oleic acid,’ a monounsaturated fat that may help lower cholesterol.  So, go ahead and dig in to these healthy, tasty muffins!

  • 1 ripe avocado
  • 1 1/2 cups whole wheat flour
  • 1/2 cup melted dark chocolate
  • 1/3 cup unsweetened coconut flakes
  • 1 tsp baking powder

  • 1/3 cup olive oil
  • 2 tsp vanilla extract

  • Pre-heat oven to 350 degrees.

  • Mix the avocado puree with the dry ingredients; mix well.
  • Pour into muffin cups and bake for 20 minutes or until done.
  • Enjoy!

  1. Hi again!
After a lot of search I finally found some really good quality chocolate, Lindt. It was quite expensive but I figured it would be very well worth it. I baked these muffins this afternoon for tea with some friends of mine. and let me tell you, OMG! These muffins are like heaven, chocolate-y moist heaven! I couldn’t stop eating these and neither could my friends! They loved them so much they couldn’t stop asking me for the recipe. I told them about your blog and the amazing recipes you have! Thank you for these amazing muffins, Amie! 😀
Can’t wait to try another one of your recipes! xxoo

    1. Awww thank you so much; so sorry for the delay in response as I am in San Diego speaking at the BlogHer Conference and just saw your comment. My apologies but I am so so so happy you enjoyed this recipe. Thank you for letting me know. Have a wonderful weekend. xooox Aims

  2. Hi! First I just want to say that I really love your blog and your recipes sound so decadent, interesting and healthy at the same time! 😀 So, I’m really interested in making these muffins, they look absolutely delish! I’m just having an issue, though.. I can’t get my hands on good quality chocolate, they all are packed with sugar. Is it possible to adjust the recipe so that I can use cocoa powder instead of the melted chocolate? I can’t seem to know how to adapt it.. Could you help me with this? I REALLY want to try out this recipe! Thanks in advance! xxoo

    1. Mariana,
Great to hear from you! You are so kind; thank you for your nice words and I am thrilled to hear from you and hope you enjoy these muffins. I haven’t tried using cocoa powder but I love baking with cocoa powder so yes, I’d say you can surely do this and try it out! Let me know how it turns out. Enjoy and have a fabulous evening. xoxxo
So great to hear from you and thank you again!

      1. Hey Amie! I’m planning on baking these for today’s afternoon tea time 🙂 And as for the substitution, I just swap the melted chocolate with the cocoa poder and that’s it? No other adjustments necessary on the other ingredients? xxoo

  3. Can’ t wait to try these…
Can you use cows milk also? What is reason for omiting this option?
How many muffins does this make? Thanks

    1. I’m so glad you’re interested in baking my tasty avocado muffins…they’re one of my favorites! Yes, you surely can use cows milk, I unfortunately am lactose intolerant, therefore I cannot use cows milk, but I have friends that use cows milk for this recipe and the muffins taste delish. This recipe makes 12 muffins. Enjoy and let me know how you like them.

  4. Wow, these are delicious! Enjoying them with an avocado & raspberry smoothie – perfection. Thank you so much for sharing this recipe!!

    1. Thank you, I’m so glad to hear you like this recipe….I hope you like these muffins…the avocado makes them incredibly moist and pairs perfectly with the dark chocolate….you’re right this would be delish with a raspberry smoothie…now you’ve got me yearnin’ to make them…yummmm….enjoy!

    1. These were outstanding! I’m wary of “healthy” desserts, but these were rich and decadent. You can’t taste the avocado at all! I added some cacao nibs for a bit of an extra crunch. I would recommend these to anyone! Any more chocolate desserts up your sleeve?

      1. Thank you so much, Danielle…I am so glad to hear that you enjoyed these muffins..they’re one of my favorites…I will surely be posting some more chocolate recipes soon! Best, Amie
