There’s something so pretty and delicate about sugar cookies, isn’t there?

They just look so nice and innocent.

Until they land on your thighs when you wake up on December 26th, right?

Think again.

These cookies ain’t nothin’ like my eggnog sugar cookies you’re used to munching on.

They’re special.

And they’re gluten-free, dairy-free, soy-free, nut-free and vegan. Whew. There’s a lot that these cookies aren’t.

But flavor sure isn’t one of them.

Chances are you’re sick of baking cookies. It’s Christmas Eve and you can’t look at another bowl of raw cookie dough, right?

Snap out of it. You’ve got company coming over in a few hours and you need these in your life.

So, fire up your oven.

And push aside the green been casserole.

Cause these babies are gunna make you smile and the sweet touch of pumpkin is gunna rock your world!

Pumpkin Coconut Sugar Cookies

Ingredients
  • 1 cup canned pumpkin
  • ½ cup melted coconut oil
  • ⅓ cup stevia powder
  • ¼ tsp. stevia liquid
  • 1 Tbsp. Simply Organic Almond Extract
  • 1½ cups All Purpose Gluten-Free Flour
  • 1 tsp. baking soda
  • ¼ tsp. sea salt
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a large bowl, combine pumpkin, coconut oil, stevia and almond extract.
  3. Add remaining ingredients; mix well to combine.
  4. Sprinkle gluten-free flour on a flat surface. Roll dough on the surface with a rolling pin to create ⅓ inch thickness. Use cookie cutters to create shapes.
  5. Place shapes onto a nonstick cookie sheet; bake for 10 minutes or until golden brown.
  6. Remove from oven; set aside on a baking rack for 10 minutes before serving.

I have a quick question, what brand of powdered stevia are you using in your recipes? Also, what brand of drops do you use? Thanks so much!! Kristen

    1. Thanks Kristen; hope you enjoy them. I use the NuNaturals Stevia in my recipes and I love it! I use their liquid and powdered stevia! Hope that helps!

  3. Hi, I know that Stevia tends to have an aftertaste when being used as the only sweetener in a recipe. Do the other ingredients listed mask that?

  4. This is my first try at baking gluten free. I don’t have gluten free flour, but found a website to make my own from rice flour, hazelnut meal and almond meal. I used your measurements, but the dough is the consistency of drop cookies. I’m guessing gluten free flour makes a big difference. I also used brown sugar instead of stevia (I don’t have any). I made them drop cookies. The dough tastes fantastic, so I’m assuming the cookies will be just as good. Do you ever make your own flour?

    1. Thanks Becky; great to hear from you! I haven’t made my own flour; I usually just use one of my favorite all-purpose flours because they are easy to use in a time crunch. Enjoy!!

  5. What type of stevia powder are you talking about? The kind I have is super potent and it made me gasp to see the measurement. LOL. Is there some sort of cup-for-cup stevia that you are talking about?

  6. What did you sprinkle on top of these cookies? Because from the looks of it, it looks like they are topped with real sugar? Does stevia come granulated? I have never seen it that way before.
