There’s something so pretty and delicate about sugar cookies, isn’t there?
They just look so nice and innocent.
Until they land on your thighs when you wake up on December 26th, right?
Think again.
These cookies ain’t nothin’ like my eggnog sugar cookies you’re used to munching on.
They’re special.
And they’re gluten-free, dairy-free, soy-free, nut-free and vegan. Whew. There’s a lot that these cookies aren’t.
But flavor sure isn’t one of them.
Chances are you’re sick of baking cookies. It’s Christmas Eve and you can’t look at another bowl of raw cookie dough, right?
Snap out of it. You’ve got company coming over in a few hours and you need these in your life.
Like, now.
So, fire up your oven.
And push aside the green been casserole.
Cause these babies are gunna make you smile and the sweet touch of pumpkin is gunna rock your world!
Now and on December 26th.
Trust me on that one!
Have a very Merry Christmas.
Love to all of you!

And don’t forget to head over to my Facebook Page where I’m hosting the ’25 Days of Christmas’ Giveaway Every Day. I’m giving away a new gluten-free gift everyday from December 1st-December 25th.
Enjoy and Good Luck!
What did you sprinkle on top of these cookies? Because from the looks of it, it looks like they are topped with real sugar? Does stevia come granulated? I have never seen it that way before.
You can use palm sugar or raw sugar or stevia or xylitol. Any of those will work!
Would the cookies turn out if I used Nutiva instead of coconut oil?
The Nutiva coconut oil would work!
I so want to try these! All the ingredients are staples in my house.
What type of stevia powder are you talking about? The kind I have is super potent and it made me gasp to see the measurement. LOL. Is there some sort of cup-for-cup stevia that you are talking about?
I use cup for cup Stevia in the Raw, Monica. It’s not strong!
Oh my these sound yummy! I am going to ask my hubby to make them for me!
These look adorable AND delicious! Definitely picking up some pumpkin soon. 🙂
This is my first try at baking gluten free. I don’t have gluten free flour, but found a website to make my own from rice flour, hazelnut meal and almond meal. I used your measurements, but the dough is the consistency of drop cookies. I’m guessing gluten free flour makes a big difference. I also used brown sugar instead of stevia (I don’t have any). I made them drop cookies. The dough tastes fantastic, so I’m assuming the cookies will be just as good. Do you ever make your own flour?
Thanks Becky; great to hear from you! I haven’t made my own flour; I usually just use one of my favorite all-purpose flours because they are easy to use in a time crunch. Enjoy!!
Hi, I know that Stevia tends to have an aftertaste when being used as the only sweetener in a recipe. Do the other ingredients listed mask that?
You can use sugar if you’d like Heather! Hope that helps!
OMG! These look amazing!! It’s the Canadian thanksgiving next week, and I think I’ll need to give these a try!
What can I use in place of stevia? Maple syrup?(how much?) Brown sugar? Sucanat? Thanks!
Sarah,
I only used Stevia but sugar should work too!
I’m making these now but the flour measurement must be off? Do you mean 2.5 cups? Thanks!
Sarah,
The measurement is correct on my blog. Are you using gluten-free flour? Thanks!!
Amie… I’m playing catch-up on my Google reader and I WANT THESE COOKIES. I do not care that the holidays are over. I do not care if it’s not cool to bake with pumpkin in January. I love this recipe. Thaaaaank you.
Your welcome, Heather. Enjoy darling! xooxox They’re great for Valentine’s Day, too!
Hi Amie, these look incredible. I’m new to gluten free baking from scratch, but I love the idea so I will try these for our NYE family get together. I have a quick question, what brand of powdered stevia are you using in your recipes? Also, what brand of drops do you use? Thanks so much!! Kristen
Thanks Kristen; hope you enjoy them. I use the NuNaturals Stevia in my recipes and I love it! I use their liquid and powdered stevia! Hope that helps!
HI AMIE,
WILL MAKE THESE TOMORROW AFTER CHURCH BEFORE MY COMPANY GETS HERE. MERRY X MAS TO YOU AND YOUR FAMILY ENJOY THE DAY.GOD BLESS
Enjoy! Thanks Beverly!
Do you think I can substitute Earth Balance for the coconut oil?
Thanks Marie; I didn’t try using Earth Balance but I’m sure you could try it and see how they turn out! Let me know how it goes. Happy Holidays!!
Love this! Yes, so pretty. 🙂 Thanks, Amie, I’m going to try these over the holidays!
Hope you have a wonderful Christmas! xo
