We’re making lettuce wraps today and they’re one of the most flavorful recipes I’ve ever made. Not only are these fajitas easy to make, they’re topped with an incredible Avocado Crema using Elmhurst Unsweetened Hazelnut Milk. (GIVEAWAY BELOW)

Now, I know what you’re thinking…hazelnut milk in fajitas?

The only ingredients in this non-dairy milk are filtered water and hazelnuts. Talk about a clean product! I cannot stop drinking it and making recipes with it, as well, which brings me to today’s delicious recipe.

How to Make Fajita Lettuce Wraps

You know I’m all about 3 simple steps for every recipe, so here they are:

Step 1: Saute a diced white onion with olive oil in a large skillet over medium heat. Add zucchini and carrots, saute until tender, then add cinnamon, cumin, salt, and pepper.

Step 2: Remove from heat and spoon into lettuce leaves. Add grape tomatoes, red bell pepper, walnuts, and parsley.

Step 3: Make the avocado crema with ripe avocados and Elmhurst Unsweetened Hazelnut Milk in a mini food processor, dollop on top of the lettuce fajitas and serve.

Let me talk to you for a minute about this non-dairy milk. It’s by far the best brand I’ve ever tried and the best part is that their clean process doesn’t use stabilizers or gums like carrageenan, locust bean or xanthan gum. They’re all about creating a “whole foods” drink with a creamy texture by extracting the nutritional benefit of nuts in a clean form (without any junk added).

This, my friends, is my kinda brand. I wish every food and beverage brand cared as much as they do about the quality and taste of their products without adding inflammatory ingredients that make so many of our belly’s hurt! I know you feel the same way.

Elmhurst sells everything from almond milk to oat milk to cashew milk to walnut milk and more (check out all of their products here). I highly suggest you check out their super clean products!

Because I love these products so much, I want to give you the opportunity to try them. If you’d like to order from the Elmhurst website, use the code: HEALTHYAPPLE518 for 15% off your order.

You can buy these milks online and in select stores (click here to find a store near you).

How to Make Veggie Fajita Seasoning

For these veggie fajitas, I used a simple veggie fajita seasoning made with cumin, cinnamon, salt, and pepper. Nothing spicy about it and nothing that will set your mouth on fire. I went for a cozier approach to the seasoning for this recipe because I know so many of you like simple, simple, simple. So, that’s what I’m giving you.

Simple fajitas that taste fabulous.

If you want a kick of hotness, feel free to add chili powder, crushed red pepper flakes or cayenne pepper to the skillet when the other spices are added.

Hey Amie! Great recipe! I honestly am not only excited to try the hazelnut variety, not just because it is used in the recipe, but because hazelnuts are my favorite kind of nut. I made your homemade hazelnut chocolate spread, and between me and my husband, it didn’t last long! I have never tried hazelnut milk and think it may become a new staple in the house! Thanks for the giveaway opportunity!

  2. This looks delish! I am all about switching out the milks not only to keep things interesting but also to avoid developing future food allergies. I would be most excited to try the hazelnut milk! Seems like it would be a fun flavor to combine with cacao to make Nutella-like smoothies & porridges.

Within the past couple months, I’ve had to go dairy free for the first time in my life for my breastfed baby boy who had developed eczema. Since cutting out dairy from my diet, I have lost more baby weight and his eczema has cleared up! Yay! All that to say, while I’ve never been a big milk person (Just missing my cheese!!), I am discovering new dairy free options and am super excited about this brand of dairy free milk! I think I would be most excited to try the oat milk. It sounds so rich and filling to me, and like a good staple for my breakfasts! Can’t wait to try the Hazelnut option as well, and wonder if it would be tasty in my coffee?
Thanks again for the recipe (anything with avocado is life), and for the awesome giveaway! (Super excited to be introduced to your blog as well!) ~ HM

Hazelnuts have the most folate of all the nuts and they also have the most proanthocyanidin, a phyto nutrient that will decrease the risk of clotting, getting urinary infections, and it’s 20 times more powerful than vitamin C and 50 times more powerful than vitamin E. I recommend downloading this app to get a deeper understanding about topics related to nutrition and well being
