These delicious 10-minute Fajita Lettuce Wraps are simple, light and perfect for serving during the warmer weather that's headed our way. The creamy hazelnut avocado crema is made in less than 5 minutes with only two ingredients so it’s incredibly easy and full of flavor.

Ingredients
Fajita Lettuce Wraps
  • 1 Tbsp. extra-virgin olive oil extra virgin
  • 1 large white onion diced
  • 4 large carrots spiralized or thinly sliced
  • 2 large zucchini spiralized or thinly sliced
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cumin
  • 1/2 cup grape tomatoes halved
  • 1 large jarred roasted red bell pepper thinly sliced
  • 2 Tbsp. raw walnuts
  • 1 Tbsp. fresh parsley finely chopped
Avocado Crema
Instructions
Fajita Lettuce Wraps
  1. Saute the olive oil and onion over medium heat in a large skillet until the onion is translucent and tender. Add carrots and zucchini and cook for 5 minutes or until tender. Add salt, pepper, cinnamon and cumin and remove from heat.

  2. Spoon mixture into lettuce leaves. Top with grape tomatoes, bell pepper, walnuts, parsley and avocado crema (recipe below).

Avocado Crema
  1. Puree all ingredients until creamy. Scrape down the sides as needed and puree again until desired consistency.
