I know you’re all looking for healthy gluten-free lunch ideas, aren’t you? It’s Back-to-School season and everyone from the 5 year old down the street to my corporate America neighbor wants a little yumminess for lunch tomorrow. I just know it! That’s why today, I’m sharing this super delicious veggie sandwich with you.
Well, before we dig into this sandwich, I’m going off on a little side note.
Just a tiny one.
Ok?
I’ve been thinking a lot about goal setting lately and it seems that everyone I know who sets a goal – is attached to the outcome.
And I just think it’s interesting because it’s one thing to set a goal for yourself but it’s another to place your sense of value in how much you achieve.
Instead, I think doing the best we can at something… and then letting it go… is the best way to look at goals.
I think it’s more about having faith and trust in ourselves rather than focusing on the perfect outcome.
Anyway, back to my sammie!
This gluten-free veggie sandwich is delish. It’s super simple to make and tastes amazing. Fresh. whole ingredients that will put a big smile on your face.
So, set a goal with yourself to create healthy lunches everyday this month – but don’t beat yourself up if you slip or if you choose an unhealthy option. Just get back on track the next day and think about why you chose those not-so healthy options the day before so that next time around… you’ll be armed and ready with one of these sammies in your bag to dig into and enjoy.
Have faith.
Believe me.
Everyone seems to have their own favorite sandwich and this one is surely mine.
It’s a life changer.
Or a lunch changer, hehehe.
And just simply the best.
O yea.
Hungry yet? I thought so. Get yourself ready for the best lunch date in years.
xo

Hi Amie,
Thanks for letting me know about the bread. I don’t know if it is available in stores in NYC so perhaps I will have to get it on the web.
Of course; ask your local Whole Foods Market or health food store to carry it. Rudi’s is great, too!

Thanks for the chances to win great stuff! Would so love the baking cook book. This was probably the most difficult area for my daughter as she found out she was gluten intolerant as she was making her way baking every cupcake in the Martha Stewart cupcake cookbook. She still makes them, she just adjusts accordingly.
I am a vegan/gluten free cookie company. I would love to send you some cookies to try.
