Happy Monday! Who’s in the mood for homemade chocolate chip cookies?

Even if you indulged way too much this past weekend – you’re still going to want to make room in that belly of yours for these babies. They’re fab. Completely fabulous. They will blow your mind and I’m going to teach you how to make chocolate chip cookies the easy way.

I promise.

And they’re super duper easy to make. The best part? NO sugar… NO gluten… NO dairy… NO soy. Can I get a ‘Wahhhhhoooooooooo’ from you?

Lately I’ve been thinking….

I feel like throughout my entire life people have judged each other so much no matter where I am or what I’m doing. Whether it was when I played sports and the girls were talking about other amazing players on the other teams and judging them or when I was in high school and others were judging people who were in the not so cool crowd or when I worked at VOGUE and I’d be in a group of people at lunch and a model would walk in the room and everyone would judge her.

Judge judge judge.

It’s not that I can say that I’ve never judged anyone because sadly, I have and I did. I was one of the judgers without even realizing I was. Many years ago I did. But I stopped after I started doing work on myself and finding myself and realizing the only reason people judge is because it’s their own insecurities. It’s sad, isn’t it?

I’m pretty vulnerable here on my blog because I want to be honest. To be real. To be Amie.

And I am.

I’m not trying to put on a front like I’m some fabulous thaaaaang or some stylish Manhattan gal who’s whipping up gluten-free cookies everyday….

My secret is this: I don’t judge myself as I create my blog posts and recipes and content. I just let my brain dump and I release a bunch of ideas and thoughts that are on my mind to share with all of you.

Each week I put myself out there to all of you regardless of my imperfections. I’m not perfect. But I want to share my honest story and the process I’ve taken to heal myself. My goal is to inspire you to do your best and live the life you want- not the life someone else wants you to live and not the life having Western medicine rule your life. Because, well, that’s not a life at all.

I’m willing to share myself with you every.single.week. And I’m always willing to be honest about everything as long as I add value to your life. Hopefully I do. Because at the end of the day- I do this for all of YOU.

Ingredients

  • 1/2 cup gluten-free rolled oats
  • 1 large extra ripened banana mashed well
  • 1/4 cup salted almond butter
  • 1/3 tsp. ground cinnamon
  • 1/2 tsp. organic almond extract
  • 1 tsp. coconut flakes
  • 2 tsp. stevia liquid or stevia powder
  • 2 Tbsp. dried cranberries chopped
  • 2 Tbsp. cacao nibs or you can use gluten-free/dairy-free chocolate chips
  • pinch sea salt

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a large bowl, combine the oats, mashed banana and almond butter; mix well to combine. Add cinnamon, almond extract, coconut flakes, stevia, cranberries, sea salt and cacao nibs; mix well and form into teaspoon sized balls.
  3. Transfer to a baking sheet; bake for 12 minutes or until golden brown.
  4. Remove from oven; set aside for 5 minutes on a cooling rack before serving.

  1. These look delightful and perfect for the holidays! I have a nut-allergic kid so I would replace the almond butter with coconut butter (this has worked for us in other recipes). These are a treat I could feel happy about feeding to my boys.

  7. Can’t wait to try these. All my favorite ingredients, including Almond Butter!! I would leave out the stevia or sub in a touch of honey. I don’t use sweeteners other than honey or maple syrup. Otherwise thsese look fantastic.

    1. Try NuNaturals Stevia or Stevia in the Raw- SO much better than the other flavors. Or leave it out completely or try Xylitol. Hope that helps!

  10. These look great, and I can’t wait to make them! One question about the nutritional info though. I can’t figure out how there are 14g of fat in each one if the only sources are 2 servings of almond butter, a scant tsp of coconut, and just a couple tbsps of cacoa nibs. Just wanted to make sure I’m not missing any ingredients! Thanks!
