Ready for a healthy chip that you can feel good about eating and have fun dunking them into a bit of salsa, hummus or guacamole? I know you’re all dying to know how to make tortilla chips, aren’t you? Don’t worry. It’s not as complicated as gluten-free baking – although it does involve an oven and gluten-free ingredients!

Well, then I’ve got just the recipe for you today! I often get questions from all of you asking for healthy snacks and appetizers and today I thought I’d share one of my easiest and most flavorful snacks with you. These tortilla chips take just a few minutes; they involve only a few tortillas, olive oil, spices and an oven.

O yea.

Super easy. Super yummy. And super fun for entertaining on a Saturday night cocktail party, a Friday night movie night or just a Tuesday snack that you can bite into tomorrow at 3PM when your tummy starts rumbling.

I just love these tortilla chips and I know you will, too.

Speaking of loving this recipe, I came across this quote a few weeks ago and wanted to share it with you. It really touched me and I thought you may like it.  So, here it is…

“People use the word ‘love’ a lot of different ways. Take me, for instance. I am often heard saying that I love my mom and dad. I am also often heard saying that I love pizza. What am I saying when I say I love my mom and dad? I’m saying that I care about them. I’m saying that I love spending time with them and that I talk to them every chance I get. I’m saying that if they needed me, I would do every humanly possible to help them. I’m saying that I always want what’s best for them. What am I saying when I say I love pizza? Am I saying that I care deeply about pizza? Am I saying that I have a relationship with pizza? Am I saying that if pizza had a  problem, I would be there for the pizza? (What? Not enough pepperoni? I’ll be right there!) Of course not. When I say I love pizza, I’m just saying that I enjoy eating pizza until I don’t want any more pizza. Once I’m tired of the pizza, I don’t care what happens to the rest of it. I’ll throw it away. I’ll feed it to the dog. I’ll stick it in the back of the refrigerator until it gets all green and moldy. It doesn’t matter to me anymore. These are two very different definition of the word ‘love’. It gets confusing when people start talking about love, and especially about loving you. Which way do these people love you? Do they want what is best for you, or do they just want you around because it is good for them, and they don’t really care what happens to you? Next time someone looks deeply into your eyes and says ‘I love you’, look very deeply right back and say, ‘Would that be pizza love, or the real thing?”

Interesting, right? I use the word love a lot. I love my new organic sheets my Momma bought me for Christmas. I love my apartment. I love my life. I love Earthbound Farm salads. I love warm, sunny days. I love Manhattan. And I also love a handful of incredible of people. So, it got me thinking about all of my relationships and what love actually means in each of them. It was a great way for me to really think about how real those relationships feel and what I give, what I get back and what I do and don’t expect from each one.

Just something for you to think about on a Monday morning before Valentine’s Day.

And for those of you, who like myself are alone on the big ol’ love day this week…have no fear. Just remember, your life is unfolding exactly according to plan for your highest good. And that’s all you need to know. So, go on with your day and smile because…this simply means there are things you desire to experience on your own as you are learning how to be an incredible partner to yourself. As I enter the dating world after 10 years of going on dates while I wasn’t feeling well and was emotionally numb, I’m still learning quite a lot. About men. About me. About what I deserve. And who deserves me. About who I am. And about who’s lucky enough to have me in their life.

If you are single, just remember it’s because your match is not ready for you yet. He or she is still experiencing what they need to live and learn to be truly available to meet you.

Exhale. Accept and embrace where you are.

Gluten-Free Baked Cumin Tortilla Chips

Ingredients

Instructions

  1. Preheat oven to 350 degrees F.
  2. On a flat surface, using a pizza cutter or a sharp knife, cut each tortilla into 6 triangles. Transfer triangles to a large bowl; toss with remaining ingredients. Make sure each tortilla is coated in oil.
  3. Transfer coated triangles to a baking sheet and place in the oven to bake for 8 minutes or until golden brown.
  4. Remove from oven; set aside to cool for 5 minutes.
  5. Serve alone or with salsa, hummus or guacamole.

This recipe looks great as I feel it calling to the hummus in the frifge…but those pepper seeds you are offerring are calling to me as I LOVE peppers and usually grow my own except last year when my seeds completely let me down 🙁 if I win these I know I will have a better and spicier year.     I absolutely LOVE cumin! I’m a vendor at the farmers market and the stand across from me has the most fabulous curry’s etc and he puts cumin seeds into his rice. Oh my gosh, the aroma as it steams early in the morning.. ♥
