Ingredients
White Bean Tacos
Red Taco Sauce
  • 1 14 oz can tomato sauce homemade or store bought
  • 1/4 cup water
  • 1 Tbsp. honey
  • 1 Tbsp. ground cumin
  • 1 tsp. apple cider vinegar
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 1 tsp. onion powder
  • 1 tsp. smoked paprika
  • 1/4 tsp. cayenne pepper
Instructions
White Bean Tacos
  1. In a medium saucepan bring 1 cup of vegetable stock to a boil. Add the quinoa. Cover. Simmer 10-15 minutes. Remove the pot from heat and let steam for about 10 minutes. 

  2. Drain beans and lay on paper towel in order to get rid of any remaining moisture. 

  3. Slice cherry tomatoes in half, slice and peel cucumber, and chop basil. 

  4. In a medium bowl, combine quinoa, beans, tomatoes, cucumber, basil, sunflower seeds, and salt and pepper to taste. 

  5. Using a spoon, carefully spoon quinoa/bean mixture into taco shells. Top with red sauce. 

Red Taco Sauce
  1. In a medium bowl, mix all ingredients using a whisk until well combined. Pour over the tacos before serving. Store leftovers in a sealed container in the refrigerator.
