Ingredients
  • 5 large Roma tomatoes
  • 3 cloves garlic, minced
  • 2 scallions, chopped
  • 1 large red onion, chopped
  • 1 yellow squash, sliced
  • 1 zucchini, sliced
  • 1 large ripe avocado peeled and pitted
  • 1 bunch asparagus, trimmed and steamed
  • 1 cup green beans, trimmed and steamed
  • 1 cup quinoa, cooked
  • 1/4 cup white balsamic
  • 1/4 cup fresh cilantro chopped
  • 2 Tbsp. Tabasco
  • 1 Tbsp. coriander
  • 1 Tbsp. freshly ground orange zest
  • 1 tsp. ground cumin
  • 1 tsp. chili powder
  • 1/2 tsp. anise seeds
  • Pinch sea salt and freshly ground white pepper
Instructions
  1. Combine all ingredients in a food processor; pulse until it forms a smooth consistency.
  2. Transfer to a large bowl. Place into the refrigerator for 1 hour to chill. Serve cool or at room temperature. Enjoy!
