Preheat oven to 400 degrees F. Prepare a baking sheet with parchment paper.

Toss carrots with oil, cinnamon, sea salt and pepper in a large bowl. Coat carrots with mixture then transfer carrots in a single layer on the prepared baking sheet.

Bake for 30 minutes or until crispy.

Remove from oven; set aside to cool for 10 minutes before serving. Garnish with fresh cilantro. Serve warm or at room temperature.
