  • 1 Tbsp. sesame seeds
  • 1 15 oz. can butter beans, drained and rinsed
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 2 cups loosely packed baby spinach
  • 2 Tbsp. olive oil
  • 1 tsp. freshly squeezed lemon juice
  • sea salt and pepper to taste
  1. Toast sesame seeds in a large skillet over medium heat until golden brown. Set aside.
  2. Steam peas and corn in a steamer basket on the stove top over medium heat until tender, about 4-5 minutes. Remove from heat.
  3. In a large bowl, toss beans, corn, peas and spinach with olive oil. sea salt and pepper. Drizzle with lemon juice; toss again.
  4. Transfer to a serving bowl; garnish with sesame seeds and serve.
