  1. Cook rice according to package directions.
  2. Meanwhile, rub mushrooms with 1/2 tsp. olive oil, salt and pepper; transfer to a large skillet over medium-low heat and saute whole for 2 minutes per side or until very tender.
  3. In a large bowl, toss rice with 1 tsp. olive oil, lemon juice, sea salt and pepper.
  4. Portion rice, beans, mushrooms and cabbage into serving bowls. Season to taste with sea salt and pepper. Drizzle with balsamic vinegar and garnish with pumpkin seeds and lemon zest. Serve.
