Instructions
  1. Preheat oven to 400 degrees F.
  2. Cook quinoa according to package directions.
  3. Toss apples with melted coconut oil and cinnamon on a rimmed baking sheet. Sprinkle with sea salt. Roast for 30 minutes or until tender then remove from oven and set aside for 5 minutes to cool.
  4. Portion quinoa, roasted apples, cabbage and pumpkin seeds and optional coconut flakes among serving bowls. Drizzle with balsamic vinaigrette and season to taste with sea salt and pepper. Add orange zest and serve. Add more balsamic vinegar and oil, if needed. (I don't like to have my salad sopping with dressing so if this is too dry for you, add more balsamic and oil!)
