  • 3 Tbsp. extra-virgin olive oil
  • 4 medium sweet potatoes cut into 1/2 inch cubes
  • 1 tsp. fresh thyme leaves
  • sea salt and pepper
  • 1 cup quinoa
  • 1 large beet peeled and julienne or thinly sliced
  • fresh lemon zest for garnish
  • 4 Tbsp. chopped walnuts or pecans
  • 2 large cloves garlic
  • Juice of 1 large lemon
  • 3 Tbsp. extra-virgin olive oil
  • sea salt and pepper to taste
  1. Preheat oven to 450 degrees F.
  2. Toss sweet potatoes with olive oil, thyme, sea salt and pepper; transfer to a large rimmed baking sheet. Roast for 40 minutes or until tender.
  3. Meanwhile, cook quinoa according to package directions.
  4. For the dressing, process the garlic in a mini food processor, process the garlic until minced. Add lemon juice, extra-virgin olive oil, sea salt, and pepper; process until combined. Season to taste, if needed.
  5. In a large serving bowl, toss quinoa, sweet potatoes, beets, lemon zest and walnuts (or pecans); drizzle with dressing. Gently toss to combine and serve warm.
