Ingredients
  • 2 small orange bell peppers or 1 large orange bell pepper
  • 1 Tbsp. extra-virgin olive oil
  • 1/2 cup sun-dried tomatoes in oil drained
  • 5 large heirloom tomatoes diced
  • 2 Tbsp. finely chopped sweet white onion
  • 1 Tbsp. dried cranberries or raisins or 1 pitted Medjool date finely chopped
  • 1 Tbsp. finely chopped fresh basil
  • 1 Tbsp. finely chopped fresh parsley
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground pepper
Instructions
  1. In a large skillet, saute the bell peppers with the olive oil and onion until the peppers and onions are tender and the onions are translucent. Set aside.
  2. In a large food processor, combine the sun-dried tomatoes, heirloom tomatoes, sauteed bell peppers and onions, cranberries, basil, parsley, salt and pepper; cook over medium heat and bring to a boil. Lower heat and simmer for 25-30 minutes or until the sauce is naturally sweetened from the cranberries.
  3. Season to taste with salt and pepper and serve warm.
