  1. Cook the quinoa according to the package directions. Remove from the heat; fluff with a fork and then set aside.
  2. Preheat the oven to 375 degrees F.
  3. Roast the two carrots with the olive oil and a pinch of salt and pepper on a rimmed baking sheet for 20 minutes or until the carrots are tender. Remove from the oven and set aside.
  4. Combine the soaked (and drained) walnuts, Natural Delights Medjool dates, almond milk, roasted carrots, 1/4 tsp. sea salt and 1/4 tsp. pepper and puree in a food processor until creamy.
  5. Meanwhile, place a tomato slice in the center of a serving plate. Do the same for another serving plate. Top with a scoop of quinoa and a drizzle of the sauce. Continue to layer the tomato slices and quinoa and sauce until the tower is either too high or until you run out of ingredients. Garnish with scallions, basil and sea salt and pepper to taste. Serve.
