  • 1 large head cauliflower cut into 1 inch florets
  • 1 large ripe avocado peeled, pitted and diced
  • 1 1/4 cup R.W. Knudsen Organic Pear Juice
  • 4 large fresh basil leaves
  • 1/2 tsp. sea salt plus more to taste
  • 1/4 tsp. black pepper freshly ground
  1. Steam the cauliflower florets in a large pot with a steamer basket over medium-high heat. Add 1 inch of water to the bottom of the pot and cover. Steam for 8-10 minutes or until the cauliflower is tender and soft. Remove from the heat, discard any excess water and transfer the cauliflower to a food processor with the remaining ingredients; puree until very smooth, about 8-10 minutes, scraping down the sides every few minutes if needed. This soup is thick so if you'd like a thinner soup, you can use more pear juice, if desired.
  2. Season to taste with more salt, if needed. Pour mixture into four serving bowls and serve immediately.
