Ingredients
  • 4 large red onions peeled and quartered
  • 1 1/2 Tbsp. melted coconut oil or extra-virgin olive oil plus more if needed
  • Sea salt and freshly ground pepper to taste
  • 1 large red apple diced
  • 1 large green apple diced
  • 1 pint blackberries
  • 1 pint grape tomatoes quartered
  • 2 Tbsp. walnuts raw
  • 1 Tbsp. fresh basil thinly sliced
  • Lemon zest for garnish
  • Litehouse Organic Raspberry Lime Vinaigrette Dressing
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Place the onions on a large rimmed baking sheet; drizzle with oil, sprinkle with sea salt and pepper. Roast for 40 minutes or until they are tender.
  3. Meanwhile, combine the apples, blackberries, grape tomatoes in a large bowl. Add the roasted onions when they're done. Then add the walnuts, basil and lemon zest. Drizzle with your desired amount of dressing; toss to combine and serve immediately.
