Today I’m sharing a recipe that probably fits a lot better in December for the holidays but there’s a reason for gingerbread in May, folks. Trust me here. One of my best friends, Phoebe Lapine just came out with her second book called The Wellness Project and she’s pretty darn fabulous so I’m sharing these tasty energy balls with you today so that you can make them in the spring and again for the holidays. Double the fun, right?

Let me show you how easy these babies are to make so you can whip ’em up this week for company or for a protein-packed pick me up anytime of the day (like those 3PM energy crashes most of you get).

As if these pictures don’t tell you enough about how yummy these balls are, I want to share a little bit about how they’re made and how you can easily toss a few healthy ingredients together, mold them into tiny balls using your hands and then pop them in your mouth. They’re super fun to eat for snacks and for traveling- hello Memorial Day weekend travelers…get your cookie balls packed in little parchment paper baggies so you can toss them in your mouth on the plane ride or in the car on the way to your destination. They’ll save you a big belly ache and bloating from airport food or rest stop grub.

Phoebe’s book, The Wellness Project, is full of jam-packed information on how she’s healing her body through wellness after she was diagnosed with an autoimmune disease called Hashimoto’s. After experiencing mixed results and deprivation (if you’ve gone through health issues like Phoebe and I —you get it), she adopted her own wellness routine—including limiting sugar, switching to natural beauty products to find out what lifestyle changes were worth the time, money and energy.

Phoebe and I met about 5 years ago at a wellness event, of course (because that’s all we go to) and we hit it off right away. Our energy aligned and we’ve been best buddies ever since. I’m so excited for her with the launch of this gorgeous book and I can’t wait for you to all dig in. She’s filled it with tips on everything you need to know and she talks about how she put herself through a handful of healing modalities and wellness practices and how they helped her live her best life.

Free of gluten, dairy, soy, eggs, refined sugar. Vegan.

Instructions

  1. Combine all of the ingredients in a large mixing bowl; stir until the mixture is incorporated and sticky. Place the bowl in the refrigerator for 10 minutes, or until firm.
  2. With damp hands, take 1 tablespoon of dough and shape it into a compact 1-inch ball and place it on a plate. (Keep a bowl of water by your side, since the mixture is easier to handle with damp hands.) Repeat with the remaining batter. Chill the balls until ready to serve, or up to 2 weeks, or in the freezer until you remember they’re in there.

  1. Why do you have recipes filed under “grain free” when they contain oats and rice puffs and such… Grain free dosent mean wheat free it means NO GRAINS
