Instructions

  1. Cook quinoa according to package directions.
  2. In a large bowl, toss cooked quinoa with bell pepper, cranberries, cashews and basil.
  3. In a small bowl, whisk vinegar, olive oil, orange juice, orange zest, sea salt and pepper; drizzle over quinoa salad and serve.

  1. The last time I tried making a quinoa salad, it just didn’t work. I couldn’t wash it well (they kept running out the sieve. I couldn’t seem to cook it well. And well, the salad was quite literally, a rock. Any suggestions for getting the cooking part down?

    1. Happy to help you Katy; you don’t have to rinse the quinoa before you cook it. Cook it with a small amount of water and keep stirring until all water is used up then add little more water until quinoa is very tender, about 20 minutes. oxxx
