Grain-Free Easy Fajitas tossed with salsa, peppers, tender onions and more!You’re probably wondering…where the heck are the tortillas in these pictures? Well, these fajitas are grain-free so I opted to leave the flour tortillas out of the equation and instead I used nori sheets, which are the little wrappers that keeps your cute little sushi pieces together when you’re eating sushi. These are sold in any health food store and Whole Foods Market or on amazon.com. Nori sheets are flakey and delicate when you pull them out of their bag but once they get wet or when you put cooked veggies or sauce or salsa on top of them (all of which we are using), these nori sheets get soft and bendable like a fajita but without the flour.

These nori sheets are super easy to find so I have no doubt you’ll find them on your first try. If for some wild reason you can’t find them, you can easily use Bibb or romaine lettuce instead and make lettuce wrap fajitas. Either way works!

All you need to do is saute the spiralized carrots and the bell peppers, onions and jalapeno in avocado oil with a touch of sea salt and pepper. Meanwhile, you’re going to make the best Coconut Curry Sauce by using dairy-free yogurt made from coconuts! Then, I’ve got a speedy three ingredient salsa (hello tomatoes, red onion and cilanro) that will take you less than two minutes to toss together to add a little more flavor to this Grain-Free Easy Fajita recipe.

All you have to do is lay the nori sheets on a flat surface and add the tender sauteed veggies on top, followed by the salsa and coconut curry yogurt sauce. That’s it. You’re done! You can use a fork and knife to eat these or roll them up like a burrito and eat them with your hands, which is what I love to do.

Dairy-Free Coconut Curry Sauce

Instructions

  1. In a large skillet, use 1/2 Tbsp. avocado oil to saute the bell peppers, white onion and jalapeno with sea salt and pepper until tender, about 5-7 minutes. Remove from heat and transfer the tender vegetables to a bowl. Use the same skillet to saute the spiralized carrots with the remainder of the avocado oil, sea salt and pepper. Saute until tender, about 5-7 minutes or until the carrots are soft. 

  2. Meanwhile, combine the So Delicious Coconut Milk Yogurt Alternative with curry powder and sea salt, to taste in a medium bowl.

  3. Then, combine the tomato, red onion, cilantro, sea salt and pepper to make a simple salsa.

  4. Remove the carrots from the heat and set aside.

  5. Lay the nori sheets on a flat surface. Top with the carrots, then the pepper mixture, then the salsa. Drizzle with the coconut milk yogurt sauce and serve immediately. These can be eaten with your hands if you roll the nori sheets like a burrito lengthwise or served with a fork and knife, if desired.
