I’ve been big into my Omega 3‘s lately.

Partially because of all the stomach trouble and inflammation I’ve been experiencing these past few months.

So, I started enriching my day with an extra dose of Omega 3 fatty acids in more of my meals n’ snacks.

A typical ‘rich’ day for me.  Well, now it’s easy.  Omega 3 rich eggs in the morning for a vegetable omelet, salmon salad with flax seeds and walnuts over quinoa for lunch and navy bean tacos with tofu and shredded squash for dinner.

I’ve really increased my Omega 3 consumption the past few months and I feel great.  I am in love with scallops, snapper, cod, tuna, halibut and shrimp, which are all great sources of Omega 3’s … and perfect this time of year on the grill.  Seafood in the summer = happy Amie.   I’ve even been known to create a morning omelet with flax seeds, veggies and even tossing in a bit of cooked fish in there, too.  It’s filling, digests easily and is nice n’ light in my stomach.

I always ate lots of turkey and chicken, which I still do enjoy, however as of lately my sensitive stomach has had difficulty breaking down heavier proteins, therefore I’ve opted for my lighter proteins – hence my new found love for fresh fish n’ eggs.

I’ve been doing extensive research on Omega 3’s and their anti-inflammation properties due to the stomach troubles I’ve been experiencing and this crazy whirlwind of unexplained inflammation.  It’s taught me so much about how to heal my body through food and it’s amazing how much better I feel.  Even though I am still experiencing the stomach pains, I am able to digest eggs and fish so much easier and I feel lighter and less sluggish.

That’s a good thing, right?

So, with all this Omega 3 chit chat, I thought I’d share with you this fun recipe that I created last weekend for my family.  They loved it.

Obviously.

And I was happy to deliver a delicious Omega 3 rich breakfast.  I included ground flax seeds, walnuts and Omega 3 rich eggs to ensure a hearty dose of Omega 3’s in every bite.

Not to shabby, eh?

With the Memorial Day holiday weekend coming up, you’ve gotta extra day (Monday) to sleep in! Yea.

So, here’s another excuse to whip up these cute lil’ babies and serve ’em in the sunshine to your family before you strike up the BBQ and get the grill fired up for your evening meal.

Gluten-Free.  Dairy-Free.

Waffles.

Mmmmm….

Don’t you wish it was the weekend right now so you could put on your fuzzy slippers, pour a glass of orange juice, sit with the newspaper and watch these lil’ waffles bubble as you cook ’em up?

I thought so.

Go ahead. Daydream.

Walnut Oat Waffles

Gluten-Free

Serves 4

Ingredients

  • 1 cup brown rice flour
  • 1/2 cup oat flour
  • 1 tsp. sugar
  • 1 1/3 cup almond milk
  • 1/4 cup oil
  • 1 1/2 tsp. baking powder
  • 1 tsp. sea salt
  • 2 large Omega-3 rich eggs
  • 1/4 cup tapioca flour
  • 1/3 cup potato starch
  • 1 tsp. cinnamon
  • 2 Tbsp. ground flax seeds
  • 1/2 cup walnuts, ground
  • 1 tsp. almond extract
  • 1/4 tsp. orange zest
  • 2 star anise, ground

Directions

  1. In a large bowl, combine all ingredients; whisk well to combine.
  2. Transfer batter, in batches onto hot waffle iron.
  3. Repeat until all batter is used.
  4. Enjoy!

  1. Can you freeze these waffles after you make them to eat later? I just bought a waffle iron, so I can’t wait to make them. I need to buy a few of the ingredients first.

  2. You’re so sweet, Amie. A couple more things…Fresh cabbage juice is an amazing stomach healer and have you ever been tested for h.pylori? Very common stomach bug… Hope you feel better soon…

  3. Also, there is a great book for stomach issues called “No More Heartburn, Stop the Pain in 30 Days-Naturally” by Sherry A. Rogers, MD. This book is not an easy read but it helped me tremendously, and it’s not just for heartburn issues. The title is kind of misleading. I know this is off topic but thought it may help you, Amie. I especially like the products DGL chocolate flavor by Enzymatic Therapy and L-Glutamine powder, by Vitamin Shoppe. Hope this info helps someone.

  4. Hi. I’m a newbie here. Elana’s Pantry has some good gluten free recipes, and the store “Baby cakes” came out with a gluten free cookbook (and dairy-free too, if I’m not mistaken. I love reading about food so I know these things but I’m not on a gluten-free diet!!! Anyway, one way to substitute for rice in recipes is an ingredient most people wouldn’t think about and that is a can of beans! Any variety. Just whiz them up with some eggs in your food processor. There is a couple of recipes on the ‘net for brownies, chocolate cake, and vanilla cakes, all using beans as a base. I personally developed my own version of chocolate cake that’s gluten-free, sugar free, and fat free. Or you can switch up the ingredients to make it more decadent, if you want to. (like using butter instead of prune puree, or beets)

  5. This recipe looks delish! My husband was diagnosed very recently with celiac disease and I myself was checked but told I didn’t have it, however I am certainly intolerant…I guess you could call it gluten dis-ease 🙂 Here’s the problem: I tested positive to RICE sensitivity, and this makes our lifestyle changes incredibly challenging. Anyone know of good recipe/information websites for celiac’s unable to tolerate rice??

      Thank you for your comment; greatly appreciated! I have many recipes that are free of rice as I too cannot tolerate rice. Feel free to browse my “Recipes” page as many of my dishes are without rice. Also, gluten-free grains such as quinoa are delicious and easy to make in big batches to cook and use throughout the week in your breakfast for porridge, lunch for salads and dinners for stir-fries. I actually cannot tolerate any grains as they upset my stomach and give me severe stomach trouble…therefore I have to stay away from them and make my meals even more creative without the grains. However, many of my recipes do contain grains as I do cook and bake with them, however I have to limit how much I can taste as they do bother my stomach. Thanks for your comment; have a great day!

  8. I just read your comment on ELR re: your situation with parasites, ulcer’s etc….so intrigued. I am battling some serious digestive and binging issues myself…neither of which are complementing eachother. I feel absolutely horrible and hate myself. Literally. I don’t know what to do anymore.

  9. I don’t have a waffle iron. Could this batter work for pancakes with less liquid? They sound fantastic!

      1. I’m making these tonight. My sister has newly joined me in gluten free and has no idea how to bake, Etc. She comes for a visit and I send her home with gluten free, sugar free baked goods. That’s hard to find on the internet but I’ve found a few bloggers and have had success. She can only have stevia, xylitol, and agave. At first she couldn’t have agave and that was really tough!
