Do you know how to make homemade potato chips?

I honestly didn’t know how until a few years ago. It’s pretty easy!


But before we dig into these potato chips, there’s something I wanted to chat with you about today!
I’ve outlined a few healthy tips I thought I’d share with you. I’ve been working on each of them with myself for the past few months. You see, it’s not easy being off and on sick for almost a decade and as strong as I’ve been, and as positive as I am, I’ve started to realize there is a subconscious to all of us. Something that made us sick in the first place. Yet, we don’t know what it is.
Well, I never thought I’d say this but I’ve been meditating for over a year now and it’s changed my life. Yes, I know. Me? Meditating? O YES.
I love it.
I really do.
So, today I thought I’d change up the foodie scene and chat about how I’ve made my life more spiritual.  Not in a freaky way, but just more in tune with my happiness and my life. My friends, the people who have magically entered my life in the last year, are incredibly spiritual and happy and I knew this was a sign to welcome it into my life because we can all eat as much kale and organic juice and take the best supplements and see the greatest doctors, but if you’re hurting inside or if you don’t give yourself quiet time or self-love, well, then life’s pretty cloudy, right?
It’s that time of the year for New Year’s Resolutions and I hope everyone is already eating healthy, lowering their stress and learning to breathe when you face a struggle… but just in case you haven’t had the time to jump on that band wagon, here’s a few odds n’ ends that I thought would be helpful for you.

1. Eat Simple. Eat Organic. Just Eat Real Food.

I have a very simple ‘food’ lifestyle – NOT a diet. No sugar, gluten, processed foods or dairy. But lots of organic veggies, healthy fats, and fruits.

2. You Don’t Need Things.

The older I get, the less ‘stuff’ I want and need. Less bags, shoes, clothes, etc… yes it’s constantly in my face living in Manhattan but I honestly live quite a simple, minimal life. Now, if I truly want to treat myself to a new dress or heels, I’ll do it but it’s quite rare and I make sure that purchase isn’t coming from lack – it’s coming from a place of love, not fear.

3. You Can Do It.

Life handed me PCOS, Lyme, Candida, bone marrow biopsies, hundreds of thousands of medical bills and much much more. I once said, ‘Why is this happening to me?’ but now I know better and I simply re-frame what I tell myself and say ‘This is happening FOR me’. I’ve learned to trust in the universe and that life just steers things in the right way in the end so it’s no use stressing and worrying because that’s just creating negative energy in your body and boy do I know that none of us need anymore of that!

 4. Learn About your Childhood.

You heal yourself when you forgive. And you forgive by imagining the person who has hurt you, as a child and understanding what life was like for them as a child. I’ve forgiven many people in my life. Was it easy? Heck no. I forgave my ex-boyfriends who cheated on me and broke my heart. I forgave my bosses at VOGUE for being awful to me. I forgave my father for making me cry throughout most of my childhood and even my adulthood – not because he was mean, but because he wanted me to be perfect, and well, I’m just not perfect… none of us are. So I forgave him. And that was probably the hardest thing to do. He still doesn’t ‘get’ me but I’m over it… it’s not worth me wasting tears and living in pain for someone’s issues – when they take them out on little ol’ me. This all happened in November of this year. I think I cried every time I meditated and repeated this forgiveness but it worked and it escaped by body and now I’m sure to keep it outside and not let it back in… because as we all know, there cannot be love where there is fear. Again, I chose love over fear and I remind myself to do this every single day with everything I do and every decision I make.


5. The Right Things Take Time. 

Nothing happens overnight. Everyone has their ups and downs and everyone has their own stress, fears, etc. but if you stay positive and look towards the light instead of the darkness, the right things will fall into place… they just take time.

6. The First and Last Hour of Each Day Are My Favorite.

I start my day with dandelion tea, journaling and meditation. I finish my day with an epsom salt bath and thinking about everything I’m grateful for.



7. Love Yourself.

Everyday when I wake up, I ask myself, ‘How can I love myself today?’ You have to FEEL this for it to make sense to you and to understand it. Our daily stressors are all about creativity being blocked. Women feel torn up by the pressure to be everything for everyone and to please everyone – this is what blocks our creative self and what causes so much of our stress each day. Unblock your life and let love in. Let the light in. Just close your eyes for 20 seconds and see the white light, then go on with your day.

Gluten-Free Salt & Vinegar Baked Potato Chips
Serves: 8

  1. Preheat the oven to 400°F.
  2. Toss the potatoes in a large bowl with olive oil and vinegar. Season with dill, garlic powder, chili powder, sea salt and pepper; toss again to ensure all chips are evenly coated. Place potato slices on a baking sheet; bake for 10-12 minutes or until golden brown.
  3. Remove from oven; set aside for 10 minutes to cool before serving. Serve as a side dish or as an appetizer with guacamole, salsa or hummus.
