We’re making lettuce wraps today and they’re one of the most flavorful recipes I’ve ever made. Not only are these fajitas easy to make, they’re topped with an incredible Avocado Crema using Elmhurst Unsweetened Hazelnut Milk

Now, I know what you’re thinking… hazelnut milk in fajitas?

YES.

The only ingredients in this non-dairy milk are filtered water and hazelnuts. Talk about a clean product! I cannot stop drinking it and making recipes with it, as well, which brings me to today’s delicious recipe.

How to Make Fajita Lettuce Wraps

You know I’m all about 3 simple steps for every recipe, so here they are:

Step 1: Saute a diced white onion with olive oil in a large skillet over medium heat. Add zucchini and carrots, saute until tender, then add cinnamon, cumin, salt, and pepper.

Step 2: Remove from heat and spoon into lettuce leaves. Add grape tomatoes, red bell pepper, walnuts, and parsley.

Step 3: Make the avocado crema with ripe avocados and Elmhurst Unsweetened Hazelnut Milk in a mini food processor, dollop on top of the lettuce fajitas and serve.

EAT!

How to Make Veggie Fajita Seasoning

For these veggie fajitas, I used a simple veggie fajita seasoning made with cumin, cinnamon, salt, and pepper. Nothing spicy about it and nothing that will set your mouth on fire. I went for a cozier approach to the seasoning for this recipe because I know so many of you like simple, simple, simple. So, that’s what I’m giving you.

If you want a kick of hotness, feel free to add chili powder, crushed red pepper flakes or cayenne pepper to the skillet when the other spices are added.

Ingredients

Fajita Lettuce Wraps

  • 1 Tbsp. extra-virgin olive oil extra virgin
  • 1 large white onion diced
  • 4 large carrots spiralized or thinly sliced
  • 2 large zucchini spiralized or thinly sliced
  • 1/2 tsp. sea salt
  • 1/4 tsp. pepper
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. ground cumin
  • 1/2 cup grape tomatoes halved
  • 1 large jarred roasted red bell pepper thinly sliced
  • 2 Tbsp. raw walnuts
  • 1 Tbsp. fresh parsley finely chopped

Avocado Crema

Instructions

Fajita Lettuce Wraps

  1. Saute the olive oil and onion over medium heat in a large skillet until the onion is translucent and tender. Add carrots and zucchini and cook for 5 minutes or until tender. Add salt, pepper, cinnamon and cumin and remove from heat.

  2. Spoon mixture into lettuce leaves. Top with grape tomatoes, bell pepper, walnuts, parsley and avocado crema (recipe below).

Avocado Crema

  1. Puree all ingredients until creamy. Scrape down the sides as needed and puree again until desired consistency.
