quinoa salad

This post was created in partnership with ALDI. All opinions are our own.

I get it. Salads in the winter can sound awful. Really awful. Just the thought of eating a salad when it’s freezing outside doesn’t sound appetizing to me. I’m sure you feel the same way. As much as I love salads, I’ve been adding in more cooked, warm foods throughout the winter months to nourish my body and I’ve seen a huge improvement in my digestion and overall energy. It’s funny–I always heard that we should be eating with the seasons but I never really understood it. I always ate cold foods and cold salads and raw veggies until my acupuncturist told me I needed to add in more cooked, warm foods. And so that’s just what I did. Which brings me to today’s post, which is all about warm salads, including the above Roasted Onion Arugula Salad, which is pretty amazing if I do say so myself.

I teamed up with ALDI to create a meal plan just for you with my recipes and the ALDI recipes so you can enjoy a week of fresh, wholesome goodness without feeling like you have to reach for a salad. As I mentioned last week in my Creamy Cauliflower Soup post and the week before that in my 2 Clean Eating Bowls post, I’m working with ALDI on their new healthy living resource just for you that includes videos, meal plans and recipes over on the ALDI blog. This program is called Hello, Healthy and it’s super helpful for helping you get (and stay) healthy this year.

Head on over to the ALDI blog to check out my second meal plan as well as the handy shopping list that goes along with it!

Enjoy!
