They’re bite sized.

Fun ‘ta pop on into your mouth.

Ready in a jiffy.

Don’t require any baking.

And, o ya. They taste really, really good.

Not to mention, they’re healthy.

And good for you.

Healthy fats, a nice dose of protein and a bit of natural sweetness from orange zest, coconut flakes, cocoa powder and brown rice syrup.

After all, it is Friday… and the June sunshine is right around the corner, hopefully.

So why not treat yourself?

Indulge in one of these lil’ babies.

The best part? Green Tea.

Well, it’s a lil’ caffeine boost for ya and tastes pretty darn good, too.

Gluten-Free Almond Truffles

Gluten-Free and Vegan

Makes 12

Ingredients

  • 1 cup almonds
  • 2 Tbsp. brown rice syrup
  • 3 dates
  • 2 dried apricots
  • 1 Tbsp. green tea, brewed
  • 1 tsp. cinnamon
  • 1 1/2 Tbsp. cocoa powder
  • 2 Tbsp. coconut flakes
  • 1/2 tsp. orange zest
  • 1 ripe avocado, peeled, pitted and sliced

Directions

  1. Place all ingredients into the food processor; pulse until smooth.
  2. Transfer to a piece of wax paper, wrap and store in the refrigerator for 2 hours.
  3. Remove from fridge; mold into golf-ball sized balls and serve.
  4. Store remainder in a sealed container in the fridge.
  5. Enjoy!

  2. Hi Amie! Nice to “meet” you. After looking around your gorgeous blog, I think we have a lot in common. Wish I had been in DC with you all. I tried to pull it off and make the journey, but I had too many things going on here (Golden, CO). Hopefully I’ll meet up with you and Jules one of these days. That cake looked amazing.

  3. Amie – it was so fun having you join us at 1in133; what great things we have accomplished together!
    Already the FDA is moving to meet its long-overdue mandate to establish a federal “gluten-free” standard for food labeling, and we have allies in Congress who will now be watching, and are “strongly urging” the FDA to doso as soon as possible. We have the attention of those who need to be addressing this GF labeling vacuum, and we will push until it happens. See what great things can be achieved when our GF community works together … and we build a really giant GF cake that can’t be ignored! ; )
