<li>4      Tbsp. olive oil</li>
<li>1      medium sweet onion, finely chopped</li>
<li>1      1/2 cups low-sodium vegetable broth</li>
<li>2      cups water</li>
<li>1      large sweet potato, peeled and sliced 1/4 inch thick</li>
<li>4      beets, peeled and sliced 1/4 inch thick</li>
<li>6      lbs. watercress, coarsely chopped</li>
<li>1      cup almond milk</li>
<li>1      cup Greek plain yogurt</li>
<li>Sea      salt and pepper</li>
<li>2      cucumbers, peeled and finely diced</li>
<li>2      Tbsp. balsamic vinegar</li>
<li>2      Tbsp. fresh cilantro</li>
</ul>
<p><strong>Directions</strong></p>
<p>1. In a large saucepan, heat the olive oil. Add the onion and cook over moderate heat, stirring, until softened. Add the broth and water; bring to a boil. Add the sweet potato and beets, cover and simmer over low heat until tender, about 20 minutes. Add the watercress and cook for 3 minutes.</p>
<p>2. Transfer the soup to a food processor; puree.Â  Then, transfer the mixture back to the saucepan. Add milk and Greek yogurt, cucumbers and vinegar.Â  Season with salt and pepper to taste.</p>
<p>3. Ladle the soup into bowls. Garnish with fresh cilantro and serve.</p>

Last night, I created a deliciously simple sweet potato and almond soup that warmed me up after my chilly walk home.Â  Let's just say that it hit the spot and paired perfectly with a side of grilled vegetables and tofu smothered with organic tomato sauce and sprinkled with nutritional yeast...delicious is an understatement. 
Dig in, this is a tasty protein-packed soup with a nice dose of beta carotene that is sure to fill you up (and warm you up) on a chilly March evening.
Ingredients

<li>Topping: fresh cilantro</li>

<li>Prick      sweet potatoes with a fork to create air pockets. Place into the microwave      for 10 minutes. Set aside.</li>
<li>In a      large saucepan, heat oil.Â  Add onion      and cook until they begin to brown, approximately 3 minutes. Add garlic;      stir for 2 minutes.Â  Add lime juice,      all spice, chili powder, and sea salt and pepper.Â  Cook for 10-15 minutes.</li>
<li>Peel      sweet potatoes and chop into small chunks.Â       Place into a food processor along with the vegetable broth, Greek      yogurt and <a href="http://www.kremaproducts.com/" target="_blank"><strong>Krema Almond Butter</strong></a>; puree until smooth.Â  Add the puree to the pot and mix well.</li>
<li>Transfer      to serving dishes and garnish with cilantro.</li>

<ul>
<li>5 Tbsp. vegetable broth</li>
<li>1 medium onion, coarsely chopped</li>
<li>4 medium cloves garlic, coarsely chopped</li>
<li>2 cups fresh snow peas</li>
<li>1 1/2 cups asparagus, chopped into 1 inch pieces</li>
<li>4 Tbsp. sunflower seeds</li>
<li>1 ripe avocado, peeled, cored and chopped</li>
<li>1 tsp. white balsamic vinegar</li>
<li>4 Tbsp. <a href="http://healthyapple.theopenskyproject.com/amco-citrus-lemon-squeezer.html" target="_blank">freshly squeezed lemon juice</a></li>
<li>3 Tbsp. lemon zest</li>
<li>3 Tbsp. fresh parsley, chopped</li>
<li>1/8 tsp. chili powder</li>
<li>1 tsp. <a href="http://healthyapple.theopenskyproject.com/smartthingz-fitflax.html" target="_blank">flax seeds</a></li>
<li>Sea salt and pepper, to taste</li>
</ul>
<p><strong>Directions</strong></p>
<ul>
<li>Heat vegetable broth in a small skillet over medium heat.Â  Add chopped onion and garlic; saute until onions are translucent.Â  Add snow peas, asparagus, sunflower seeds, sea salt and pepper; heat for approximately 4 minutes.</li>
<li>Transfer snow pea mixture into a blender or <a href="http://healthyapple.theopenskyproject.com/black-decker-fp1450-quick-n-easy-food-processor.html" target="_blank">food processor</a>.Â  Add avocado, white balsamic vinegar, <a href="http://healthyapple.theopenskyproject.com/amco-citrus-lemon-squeezer.html" target="_blank">lemon juice</a>, lemon rind, chopped parsley, sea salt and chili powder; puree until desired consistency.</li>
<li>Serve at room temperature or chilled.</li>
<li>Enjoy!</li>

Last night, I got to thinking...its been quite some time since I've whipped up a guacamole, so I picked up an avocado at my corner farmer's market and decided to get creative...how creative? <li>In a large bowl, combine vegetable broth, tomato sauce, tomato slices, onions, scallions, olives, spices, agave nectar, sea salt and pepper to form a sauce.Â  Set aside.</li>
<li>Spray a casserole dish with cooking spray.Â  Layer half of the chicken, then beans, then half of the sauce, Cheddar Cheese, Jalapeno Cheese and tortilla chips.</li>
<li>Repeat layers, ending with cheese on the top.</li>
<li>Bake for 40-45 minutes or until casserole is bubbling and cooked.</li>
<li>Garnish with cilantro and top with a dollop of each: Greek plain yogurt, guacamole and salsa.</li>

<li>2/3 cup rice flour</li>
<li>1 tsp. salt</li>
<li>1/4 cup ripened avocado, mashed and slightly melted</li>

<p><strong>Directions</strong></p>
<ul>
<li>Preheat oven to 400 degrees.</li>
<li>In a large bowl, beat together milk and eggs.Â  Add flours and salt.Â  Slowly add in avocado.</li>
<li>Transfer mixture to a 12 inch circle on a baking sheet or round pizza pan. Be sure to leave a thicker crust along the outsides to keep the sauce and vegetables from running onto the pan.</li>
<li>Top with sauce and vegetables of your choice (see below).</li>
<li>Bake for 25-30 minutes or until pizza is golden brown and fully cooked.</li>

<li>1 (8 ounce can) organic tomato sauce</li>
<li>4 fresh basil leaves, finely chopped</li>
<li>1/2 cup sweet onion, finely chopped</li>
<li>1 garlic clove, finely chopped</li>
<li>2 Tbsp. agave nectar</li>
<li>1/2 tsp. sage</li>
</ul>
<p><strong>Directions</strong></p>
<ul>
<li>In a large bowl, combine all above ingredients and mix well.</li>
<li>Spread evenly atop unbaked crust.</li>
<li>Top with the following or any toppings of your choice:</li>

<li>1 Tbsp. ground flax seeds</li>

<p><strong>Ingredients</strong></p>
<ul>
<li>1/4 cup Greek plain yogurt</li>
<li>2 Tbsp. spicy, stone ground mustard</li>
<li>1 small tomato, finely diced</li>
<li>2 Tbsp. fresh cilantro, finely chopped</li>
<li>2 Tbsp. fresh parsley, finely chopped</li>
<li>1/4 cup sweet onion, finely chopped</li>
<li>2 Tbsp. lemon juice</li>
<li>1 Tbsp. balsamic vinegar</li>
<li>1 tsp. dulse flakes</li>
</ul>
<p><strong>Directions</strong></p>
<ul>
<li>Simply combine all of the above ingredients into a medium sized bowl and mix well.</li>
<li>Serve chilled or at room temperature atop fillet of sole, steamed kale and blanched sweet onions.</li>
<li>I served my sole with an additional dollop of Greek plain yogurt and salsa (gotta love the extra&#8217;s, hehe) as you can see in my picture below.</li>

Last evening, I created a delicious dinner for myself...I spent my afternoon in the long lines of Whole Foods Market at Columbus Circle...after waiting online and fighting the New Year's Eve crowds (at 3 PM), I was a happy camper with my fresh piece of sole, parsley, cilantro, onions, tomatoes and kale.

<li>1 can chickpeas, drained and rinsed</li>
<li>2 large zucchini, cut into 1&#8243; cubes</li>
<li>2 yellow bell peppers, sliced</li>
<li>1 medium eggplant, cut into 1&#8242;&#8221; cubes</li>
<li>2 sweet potatoes, cut into 1/2&#8243; cubes</li>
<li>1 3/4 cup all natural tomato sauce</li>
<li>1/4 cup olive oil</li>
<li>1 cup low-sodium vegetable broth</li>
<li>4 fresh basil leaves</li>
<li>1 bay leaf</li>
<li>1/4 tsp. chili powder</li>
<li>1/4 tsp. cinnamon</li>
<li>Sea salt and pepper, to taste</li>
</ul>
<p><strong>Directions</strong></p>
<ul>
<li>In a large <a href="http://healthyapple.theopenskyproject.com/taylor-timer-thermometer-w-s-s-probe-32-392-f-2239.html" target="_blank">stock pot</a>, add onions, olive oil and garlic.Â  Cook for 2 minutes.</li>
<li>Add all remaining ingredients and cook, covered, on low heat for 6-7 hours or until vegetables are tender.</li>

<p><strong>Ingredients</strong></p>
<ul>
<li>2      small onions</li>
<li>4      garlic cloves, finely minced</li>
<li>1 tsp.      chili powder</li>
<li>1      teaspoon peppercorn</li>

<li>1      tablespoon cumin seed</li>
<li>2      teaspoons red pepper flakes</li>

<li>2      teaspoons ground ginger</li>
<li>Â¼ cup      fresh basil, chopped</li>
<li>1      teaspoon garam masala</li>
<li>1      tablespoon sweet paprika</li>
<li>14      ounces diced tomatoes</li>
<li>1 1/2      cups Oikos plain Greek yogurt</li>
<li>1      tablespoon olive oil</li>
<li>1/3      cup macadamia nuts, mashed</li>
<li>1 lb      chicken breasts, cut into 1 inch pieces</li>
</ul>
<p><strong>Directions</strong></p>
<ul>
<li>Heat      olive oil in a large skillet. SautÃ© onions until they begin to caramelize.</li>
<li>Add      garlic and cook for another 2-3 minutes.</li>
<li>Add      all spices.</li>
<li>Stir      until well combined; let it all mix together in the skillet for a few      minutes.</li>
<li>Add      tomatoes and water; mix well. Reduce heat to a simmer for 15 minutes while      it thickens.</li>
<li>Whisk Oikos      plain Greek yogurt into the sauce; mix well.</li>
<li>When      the sauce begins to simmering again, add chicken; simmer for 10 minutes or      until chicken is completely cooked.</li>
<li>Serve      over warm brown rice or whole wheat pasta.</li>
<li>Sprinkle      with mashed macadamia nuts and fresh basil.</li>

</strong></p>
<p><strong>Ingredients</strong></p>
<ul>
<li>3 Tbsp.olive oil</li>
<li>1 onion, sliced</li>
<li>3 cloves garlic, sliced</li>
<li>2 heads cauliflower, cut into florets</li>
<li>1 Tbsp. agave nectar</li>
<li>Dash of cinnamon</li>
<li>Dash of red pepper flakes</li>
<li>Â½ cup white wine</li>
<li>1Â½ quarts vegetable stock</li>
<li>4 thyme leaves</li>
<li>2 bay leaves</li>
<li>1 cup Greek plain yogurt</li>
<li>2 Tbsp. white balsamic vinegar</li>
<li>Sea salt and fresh ground pepper, to taste</li>
</ul>
<p><strong>Toppings</strong></p>
<ul>
<li>2 cups gluten free bread, cut into cubes</li>
<li>1 cup reserved cauliflower, cut into florets</li>
<li>Â¼ cup golden raisins</li>
<li>4 Tbsp. ghee</li>
</ul>
<p><strong> Directions</strong></p>
<ul>
<li>In a large      saucepan or soup pot, heat the oil over moderate heat. Add the onions and garlic      and cook until translucent, about 5 minutes.</li>
<li>Add the      cauliflower; set aside 1 cup for the topping.</li>
<li>Season with sea salt,      pepper, cinnamon and pepper flakes and cook for 5 minutes longer. Add the      white wine and enough vegetable stock to cover the cauliflower; add the      thyme and bay leaves. Cover and simmer until the cauliflower. Discard the      bay leaves and remove 2 cups of the cooking liquid to set aside.</li>
<li>In a blender,      puree the cauliflower mixture a little bit at a time. Add the reserved      cooking liquid as needed if the mixture is too thick.</li>
<li>After pureeing,      return mixture to a clean pot and cook over low heat. Stir in the ghee and      Greek yogurt, then adjust seasonings.</li>
<li>For the topping,      melt the ghee over medium heat in a skillet. As it starts to brown, add the      bread cubes and gently toss. Season with sea salt and pepper.</li>
<li>Add the      cauliflower and cook until bread is crispy and cauliflower is soft, then      add the golden raisins.</li>
<li>Serve warm with      the crouton mixture topping.</li>

<li>Preheat oven to 400Â°F.Â  Spray a baking dish with non-stick cooking spray and set aside.</li>
<li>Over medium heat, cook onion and celery in a large skillet with olive oil, salt and pepper; stirring occasionally, until softened, 8 to 10 minutes.</li>
<li>Transfer to a bowl and toss with bread cubes, dried cherries, white balsamic vinegar, mashed avocado, celery leaves, and sage.Â  Set aside to cool for five minutes.</li>
<li>Whisk together vegetable broth and egg in a large bowl.Â  Gently toss with bread mixture until absorbed.</li>
<li>Transfer to baking dish and bake, covered with foil for about 45 minutes.</li>
