Simple. Ahhhhhhhh, that’s the word of the day. It’s what we all need more of in our lives, isn’t it?

Simplicity.

It just sounds fabulous, doesn’t it? I mean, who doesn’t want to live a simple life. Simple food, simple ingredients, simple…simple…simple. That’s my motto. I keep all my recipes simple and clean, which is why I’m excited to share these fun cookies with you today.

I’m all about living a simple life with simple (yummy) recipes so today I’m sharing a new treat with you that I whipped up yesterday when I was at the shore for the weekend visiting my family. I wanted to create a cookie that wasn’t loaded with refined sugar and had a good amount of protein and superfoods in each nibble.

When my pals from the amazing (no pun intended) Amazing Grass sent me their new Protein Superfood, I couldn’t help but call them up and ask if I could create a fun cookie with their new protein superfood. I met the founders of Amazing Grass six years ago and they’ve been such great friends of mine since then. They’re all about producing high quality products and always thinking with the customer in mind. I remember when I met them out in San Fran six years ago and they were as dedicated and passionate as they are today. That’s why I love them.

So, these cookies aren’t your ordinary cookies you’d find in the store in a processed bag. These are the real deal, folks. Talk about a dose of protein and antioxidants, fiber and nutrients in every bite, these little cookies are perfect for an afternoon snack, an evening dessert or even a quick on the go breakfast when you’re in a rush!

Vegan Cookies

I used the new Amazing Grass Protein Superfood in the Original Flavor but it also comes in Pure Vanilla and Chocolate Peanut Butter so you could use those flavors if you’d like in place of the original flavor in the below recipe. No added sugar in these babies just pure, whole fruits, veggies and lots of superfoods along with protein from peas, hemp, chia and quinoa. The best part? Aside from the flavor being out-of-this-world, everything in this protein superfood is ORGANIC, gluten-free, dairy-free and soy-free. Yay!

Finally a protein superfood that’s not full of processed rice flour and other white flours, which is what makes up many of the other protein powders that line the shelves of the health food stores. What I love about this product is that the ingredient list is SUPER simple (word of the day!) and clean. I’m about to blow your mind right now. Ready to know what superfoods are inside?

Organic wheat grass, alfalfa, barley grass, spinach, spirulina, chlorella, broccoli, pea protein, hemp protein, chia, quinoa, acai, banana, beet, carrot, goji, pineapple, sweet potato, raspberry, rose hips. Amazing, right?

You can easily add a scoop of this protein superfood to your smoothie or coconut milk yogurt anytime of the day but if you want to think outside of the box and get creative (like I did here), toss in some of this clean, pure protein superfood to your cookie recipe, waffle recipe or pancake recipe to add a boost to your day. It’s by far the best complete plant-based protein I’ve tasted yet and it’s chock full of fruits, veggies and greens. I mean, how much better can you get than that, folks?

Just in time for summer and the warm weather ahead, toss these cookies into your bag for a snack today or enjoy a nibble after dinner for a sweet treat without the guilt. I assure you, you’ll be making these over and over again.

Simple Almond Butter Superfood Cookies

Ingredients

Instructions

  1. Puree the dates in a food processor until well combined and sticky. Add the bananas and puree until well combined. Add the almond flour, oats, Superfood and almond butter; puree again until well combined. Transfer the container to the fridge and let chill for 20 minutes.
  2. Remove from the fridge, add the cherries and sesame seeds; mix well to combine. Roll into 1 inch balls on a rimmed baking sheet and bake for 25 minutes or until golden brown.
  3. Remove from the oven; set aside to cool for 10 minutes before serving. Store in a sealed container in the fridge for up to 5 days.

      I don’t use stevia anymore; I don’t use protein powders because of heavy metals either. You could try a little bit of honey! xx
