3 medium ripe organic avocados, peeled, pitted and diced
1 bunch fresh organic asparagus, ends trimmed
2 Tbsp. raw cashews
1 tsp. freshly squeezed organic lemon juice
¼ tsp. fresh lemon zest
2 Tbsp. finely chopped fresh cilantro
2 Tbsp. finely chopped fresh basil
¼ tsp. chili powder
¼ tsp. sea salt
¼ tsp. pepper
Steam asparagus in a steamer basket on the stove top for 5-6 minutes or until bright green. Remove from heat and transfer to a food processor; add remaining ingredients. Pulse until smooth; remove from food processor and transfer to a shallow serving bowl.
Serve as a dip with sliced organic vegetables or as a spread on sandwiches instead of mayonnaise.
