Pineapple Quinoa with Scallions & Vidalia Onions

Ingredients
  • 1 cup quinoa, rinsed and drained
  • 1½ cup vegetable broth
  • ¼ cup finely chopped fresh parsley
  • 1 cup diced pineapple
  • 1 large Vidalia onion, thinly sliced
  • 1 Tbsp. extra-virgin olive oil
  • 2 Tbsp. balsamic vinegar
  • 1 scallion, thinly sliced
  • ¼ cup pine nuts
  • ¼ tsp. crushed red pepper
  • ¼ tsp. sea salt
  • ¼ tsp. finely ground black pepper
Instructions
  1. In a large saucepan, combine quinoa and broth; bring to a boil. Cover and reduce heat to a simmer. Cook for 10-12 minutes or until liquid is absorbed. Remove from heat and transfer to a large mixing bowl.
  2. Add remaining ingredients to the cooked quinoa; gently toss to combine. Refrigerate until ready to serve.
  3. Serve chilled or at room temperature.
