Up until last month I was a juicer virgin.

Yep, that’s right. I’ve never owned a juicer.

Well, not my very own shiny juicer.

Until now.

And boy o’ boy did my life just get a whole lot better.

Last year when I was sick I went to my neighborhood organic juice bar every day.

Sometimes even twice a day.

But now, I’m juicin’ all by myself. And it tastes pretty gosh darn good.

Trust me, this is a good idea.

And this juice recipe will blow your mind (in a good way).

I’ve been making fresh lemonade and herbal iced teas in this Manhattan heat so I thought… Why not go ahead and  make some fresh juice?

It’s insanely refreshing and makes me feel o’ so good inside and out.

I’m just a lil’ worried about one thing.

Think I can turn green from too much juice?

Hehe…

There’s nothing quite like a glass between breakfast and lunch and then again between lunch and dinner.

Heck, I’ve even added a pinch of stevia and made myself a green juice dessert.

Leave it to me to create a green goddess to cure my sweet tooth – this cilantro and cucumber combo is simple and perfectly hits the spot on your tongue that makes you grin from ear to ear.

Especially when the sun is shining, the birds are chirping and summer is right around the corner.

Now I just have to figure out how to pack this juicer in my suitcase for my two week trip to Portland and Seattle next week.

Any suggestions?

Cilantro Cucumber Juice

Ingredients

  • 2 large English cucumbers
  • 1 head organic Romaine lettuce
  • Juice of 1 large lemon
  • 1 cup fresh watercress
  • 1 large bunch fresh cilantro
  • 1 celery stalk
  • 1 inch slice of fresh ginger
  • Pinch cayenne pepper
  • 2 Tbsp. ground flax seeds for serving

Instructions

  1. In a juicer, juice all ingredients except flax seeds into a tall glass. Top with 2 Tbsp. of ground flax seeds.
  2. Serve immediately.

    Hi Amie! I want to start by saying that I’m truly glad that I’ve found your page! Your postings have been incredibly helpful and motivational! I’ve recently discovered that I suffer from many of the same health (such as thyroid, inflammatory, digestive, and allergy) issues that you do and your page has answered so many of the questions that I’ve been searching for answers for. This juice looks phenomenal and this might be a silly question but I do just have to ask to make sure. Is it okay for us (as those with thyroid disorders and are supposed to be on a low carb diet) to drink juices on a regular basis? I know that you state that you drink this almost every day, but I am a little worried about the carb count being on the high side. Because this is made up of healthy items, does that mean the net carb intake is much lower than what’s been labeled or because it’s a juice, therefore easier to digest, its good for you? Thank you, I know this is a long question lol.

      Great to hear from you; thank you for your kind words and I’m so happy to hear you are resonating with my work. I wouldn’t do juices regularly if you have a thyroid issue. I stopped juicing years ago because of parasites on raw veggies with juicing and because of my thyroid. I would work with cooked, warm foods. I’m happy to work with you as a client if you’re interested. I do not count carbs because my philosophy is in the nutrients of the food and not in the calories and other numbers. Hope that’s helpful.     It’s so beautiful! & I love your ingredients, so I’m sure to love it, but why is a specialized Juicer superior to a mixer-grinder?

  4. I love juicing! Unfortunately, I don’t have much time in the morning before work, but when I’m home it’s so yummy. Sounds like a great recipe.

  7. When I make juicy drinks or smoothies, it’s so sad – I don’t have a juicer or blender, so I use my food processor… sometimes, it works, which is great. But usually, I just have to live with a sort of unprocessed drink. Which is fine, it still tastes good:D
