I know you’re stuffed from eating way too much and you’re ready to start eating clean for the New Year, right?

I’ve got the perfect recipe for you today- it’s a great way to detox from the craziness of the holiday nibbles and sweets and all the other gunk that you possibly dove into or face planted into because it was tempting and staring you in the face.

Am I right?

Thought so.

Well, release that guilt from eating everything in site at your holiday feast and toss this simple Swiss Chard salad into your body for a clean start to a New Year and a New You…

This is also a great salad to serve the day after New Year’s Eve…on January 1st when you’re craving lots of greens and freshness. I don’t know about you but this time of the year my body wants more veggies! Since typical lettuce in salads can get boring, I’m switching up the leafy green base in this bowl of goodness with Swiss chard, which is a super tasty leafy green that’s full of nutrients, vitamins and fiber. Plus, it’s great for detoxification and wonderful to help support your liver remove toxins from everyday things you’re exposed to in the air, tap water and the foods we eat.

The bulk of this salad comes from the Swiss chard leaves (and the pretty purple stems are crunchy and tasty, too) but I’ve also tossed in a small amount of quinoa for an extra boost of protein and amino acids to naturally support your body’s detox pathways. There’s only 1/2 cup cooked quinoa in this recipe so it will serve two people for a main dish or four people for an appetizer.

I’ve rounded out this salad with crunchy and hearty omega 3-packed walnuts as well as juicy and naturally sweet apples for a dose of flavor, crunch and antioxidants.

And of course I finished this dish off with a drizzle of protein and calcium-packed tahini (which looks like peanut butter but it’s made from sesame seeds) along with fresh parsley, which is ideal for detox and water retention.

So, there you have it. Everything you want and need from a detox in one bowl.

Now all you need to do is toss all of these goodies together and dig in.

Swiss Chard and Apple Detox Salad with Tahini Drizzle

Ingredients

  • 1 head Swiss chard chopped and stems finely chopped
  • 2 large honeycrisp apples very thinly sliced
  • 3 Tbsp. raw walnuts
  • 1/2 cup cooked quinoa
  • 2 Tbsp. finely chopped fresh parsley
  • Juice of 1 large orange
  • 3 1/2 Tbsp. tahini sesame seed paste
  • 1 1/2 Tbsp. avocado oil or extra-virgin olive oil
  • 1/4 tsp. ground turmeric
  • pinch crushed red pepper flakes to taste
  • Sea salt and freshly ground black pepper to taste

Instructions

  1. In a large bowl, toss the Swiss chard, apples, walnuts, quinoa and parlsey.
  2. In a small bowl, whisk the remaining ingredients and drizzle over the Swiss chard mixture. Season to taste with the sea salt and pepper. Use less orange juice if you'd like less of a sweet taste. Toss the salad to combine and serve immediately.
