Get your party hats on and your noise makers ready because you’re this New Year is gunna be your best one yet. This detox recipe (and yummy gluten-free salad) is gunna start your 2015 with clean eating in mind while you jump onto the healthy detox bandwagon.

I have a thing for detox salads.

They just taste so darn good.

So fresh. So flavorful. So healthy. What’s not to love?

I’ve got a serious addiction for cashews and almonds mixed in this big ol’ bowl of cabbage, cherry tomatoes, quinoa, red cabbage, broccoli, sweet potatoes and more. Huge addiction. My favorite part? The soft texture of quinoa mixed with the crunchy nuts n’ cabbage. It’s a mouth full of fun!

It’s a good problem to have. Trust me.

I’m not complaining.

But I am full.

Too full to type this. So, you’ll have to figure out what this tastes like for yourself. I’m off to take a little holiday nap.

New Year's Detox Salad

Ingredients

  • 1 cup quinoa
  • 2 cups loosely packed fresh baby spinach
  • 1 small head finely chopped purple cabbage shredded
  • 1 cup cherry tomatoes halved
  • 1 head broccoli cut into florets
  • 2 large sweet potatoes cut into 1/2 inch cubes
  • 3 Tbsp. extra-virgin olive oil
  • 2 Tbsp. fresh lemon juice
  • 1 Tbsp. white balsamic vinegar
  • 2 Tbsp. raw cashews
  • 2 Tbsp. raw whole almonds
  • Sea salt and freshly ground black pepper to taste

Instructions

  1. Cook quinoa according to package directions.
  2. Meanwhile, steam broccoli and sweet potatoes in a steamer basket over medium heat for 10 minutes or until tender.
  3. In a large bowl, toss spinach, cabbage, cooked quinoa, broccoli and sweet potatoes.
  4. In a small bowl, whisk oil, lemon juice and vinegar; pour over salad. Add cashews and almonds; toss to combine and serve.
