I often think I’d love nothing more than to dive face first into a pile of homemade guacamole.

And never surface.

But then again, I do like to sit in the sun and dip my chips in this guac- so maybe I’ll just choose that option, instead.

Either way, I’m happy.

It’s that time of the year again- time to whip up your favorite summer snacks and I’ve got you covered. Guacamole is quite possibly the greatest dip in the world and eating it in the summer is just beyond amazing.

I could make an avocado recipe every day in the summer and when I make my guacamole, I make an extra batch to keep in the fridge and use it throughout the week in everything from salads to sandwiches. But today I’m dipping in some of these tasty gluten-free Artisan Nut-Thins crackers for a perfect afternoon BBQ, picnic or trip to the beach. They’re light and crisp so you don’t have to worry about them getting soggy in your bag or from the moisture and heat of this summer sunshine. No, sir.

I think we can all agree that guacamole is quite perfect for summer and certainly face smash worthy and delish.

Am I right?

Make two batches. Trust me, you’ll thank me later.

Ingredients
  • 2 large, ripe avocados, peeled, pitted and cored
  • 3½ Tbsp. tahini
  • 2 Tbsp. finely chopped basil
  • 2 tsp. fresh lemon juice
  • ½ tsp. fresh lemon zest
  • 1 tsp. sesame seeds
  • 1 box Blue Diamond Nut Thins, for serving
Instructions
  1. Combine all ingredients (except crackers) in a large bowl; mash with the back of a fork to combine. Taste and season with additional sea salt and pepper, if necessary.
  2. Serve with Blue Diamond gluten-free crackers.

    Is there a sub for the tahini? I’ve never used this before and don’t know if I want to invest in a jar.

      Peanut butter makes an acceptable replacement for tahini. I’ve used it in a pinch in the past when making hummus.
