Before we talk about this cobbler, I’d like to ask you a question. Did you know that You are your most important relationship?

If not, you should.

I learned long ago what happiness is…

Happiness is when you feel good about yourself without feeling the need for anyone else’s approval. You must first have a healthy relationship with yourself before you can have a healthy relationship with anyone else.

It’s a must for 2013 to feel worthwhile and acceptable in your own eyes. This way, you’ll be able to look confidently into the eyes of the people around you and connect with them.

As we near the end of January, remember to take time for yourself.

Since I’ve lived in NYC I’ve given my life to my fancy Manhattan jobs. Running out for doctors appointments, trying to make everyone else happy – but never putting myself first or worrying about my own happiness.

Even in my most recent job – I did not feel ‘worthy’ or ‘worth’ it. I felt like little Amie just pounding out the work and never taking time for myself.

Well, those days are over.

O-V-E-R.

Done.

No More.

I’m all about taking time for me and my body and healing and learning and working on myself.

Because if you don’t take care of yourself, who will?

xo

  1. Hi Amie, I just found your recipes at Vitacost and am so glad I came to your site here. Lovely food and recipes. We have a 3 year old with a tree nut allergy – do you think soy milk would work in its place for tis cobbler?

  2. Amie –

I just came across your site today via Skinnytaste….and it immediately caught my eye because both my husband and daughter have to eat gluten free. I noticed your recipe calls for all purpose gluten free flour. Have you found one that you really like? I have a bunch of the Better Batter flour but not loving it. (Really like their pancake and biscuit mix though.)

    Thanks!

    1. Thank you so much Melissa; great to hear from you! I like to use Bob’s Red Mill Gluten-Free Flour and King Arthur Gluten-Free Flour. Hope that helps you! You can purchase them at a discount from the Vitacost Banner on my website on the right hand side in blue. Let me know if you can’t find it; they have great discounted items that are cheaper than health food stores and regular food sores! xox

      1. Must admit – I LOVE a bargain! Will definitely check out Vitacost!
My daughter has taken to the gluten free eating like a duck to water and does a GREAT job. The hubster – not so much… he wants everything to taste EXACTLY as it did when it had gluten… so I am happy to see a couple of good flour options and excited to experiment with them! I have an amazing bread recipe that I would love to find a way to make gluten free! Thanks again!!

  3. Sounds awesome although I’m not a huge fan of cranberries. Could I toss in dried ones? Or pitted chopped dates?

  4. I’m a newby to vegan cooking … just wondering about Stevia. I’ve tried it once before and really did not care for the flavor. Is regular sugar a proper substitute?

    1. I like using NuNaturals Stevia; have you tried that Joy? It’s the only stevia that I like the flavor of…all the other stevia’s don’t taste as good to me. I also like Stevia in the Raw for some baking recipes!

  5. Amie ~ the words you wrote were as beautiful as the pictures that you posted.. Thank you!! I have printed off the recipe and can’t wait to make it.. YUM!

  6. Looks Great! I will save this recipe till fall. Our farmers, in S.W. MI, had NO apples in 2012! Not much other fruits either. Honey crisp are $4.99/#!! Maybe this year?

  7. 4 stars
Hi, Amie. The recipe sounds delicious. Cobbler is one of my favorite desserts. Many celiacs—myself included—can’t eat oats, not even GF ones. Quinoa flakes make an excellent substitute for oats in recipes. Ancient Harvest is a brand that carries this. I wonder if you’d like to include that information in GF recipes that call for oats?

    1. Thanks Jeanne; I don’t use many quinoa flakes but I’ll try to start incorporating them into some recipes! Thanks for your comment; have a great night!
