Good Morning!

Rise n’ shine for a fresh start to the week.

It’s Monday and I’m makin’ you a batch of gluten-free apple pistachio crisp.

Yes, you heard me right. A simple Autumn apple dish that can easily be served for breakfast, mid-day snack or dessert.

So, sit back and let me introduce you to my new favorite crisp recipe.

It’s hearty, flavorful an full of everything healthy…like apples, pistachios n’ oats.Β  We’ve all tasted a fancy crisp or a cobbler at one point in our lives but I assure you – you ain’t tasted one like this before.

Unlike many crisp recipes, there’s an absence of sugary junk in this one.Β  It’s a perfect way to use up your apples during their peak season and you can store it in your fridge for up to four fabulous days.

They don’t call me, ‘The Healthy Apple’ for nothin’.Β  I make a mean, lean and seriously green scrip, people.

I’m always cookin’ and bakin’ with apples but I got the idea to bake up this special apple dessert from my buddy Kelly from Just a Taste who will be posting a scrumptious apple recipe on Wednesday- so be on the lookout for that one. (She’s got an amazing eye and palate for some pretty gosh darn incredible recipes) I’ll let you find out for yourself with her magical touch.

My crisp is naturally sweet, just the way my clients and I like it and deliciously stuffed with apples and pistachios- along with some fresh orange juice n’ zest and ground cinnamon.

Because what’s a sweet treat if fruit isn’t involved?

Right?

  1. HI AMIE,

I HAVE BEEN OFF LINE 3 DAYS COMPUTER PROBLEMS, BUT I HAVE MADE THIS AND I USED COCONUT FLOUR AND IT IS DELICIOUS. I WILL MAKE IT AGAIN AROUND THANKSGIVING. HAVE A GREAT WEEKEND!

    1. Thank you Tina; I haven’t tried using coconut flour for this recipe but I definitely think it’s worth a shot. Try adding the coconut flour and a few more oats; let me know how it turns out! xo

  2. My friend, this looks divine!!

I was so excited to see your post on BlogHer featured in the ad updates email πŸ™‚ I added it to our Buffer account to share through HLB, and when I visited your blog to make sure I credited your twitter account correctly, I saw this recipe! HOLY MOLY – this just looks AMAZINGLY DELICIOUS. I’m making one ASAP.

I can’t help but share that you should link this up on HLB’s Weekly Recipe Round up this week – the theme for this week is an ingredient spotlight on APPLES – this would be a great submission to promote through the link up! Here’s the post: http://healthylivingblogs.com/2012/09/recipe-wednesday-ingredient-spotlightapples/

    1. Awe; you are so kind. Thank you so much darling and so great to hear from you! Hope you are well and miss ya! Have a lovely night. xooxox

  3. Fall = apples = YUM! Cannot wait to try this! Love me a good crisp! I’m thinking it would be awesome with some dates in it too! Or apple-pear crisp? The possibilities are endless! Could I use g-free baking mix (such as Pamela’s) in place of the g-free flour?

    1. Thanks so much Lisa! Dates sound amazing in here and pears do too! Yes, you can surely use Pamela’s gluten-free baking mix in place of the flour. Enjoy!

      1. Made this last night! Oh my goodness! I added the dates but completely forgot the nuts! Oops. I didn’t miss them but they would have been divine! Next time I will try quinoa flakes in place of the g-free oats.

      2. So great to hear you enjoyed it Bella! I’ve gotta try adding dates and leaving out the nuts- I bet it was delish. Have a great weekend!

  4. My mouth is watering, what an amazing combo of ingredients. When should I come for dessert? Breakfast? Any time πŸ™‚

  5. Hi Amy,

I have the NuNaturals stevia in liquid form and also the small packets. How many packets, about, do you think I’d need? I serve Apple Crisp at Thanksgiving every year and would love to serve a more nutritious one. Also, can I use chopped pecans or almonds? Love your recipes!

    1. Thanks Barb; so nice to hear from you. I would use 2 packets of the stevia or 1 tsp. of the liquid- if that’s not sweet enough you can add more. Yes you can substitute any nut you’d like!

  6. Hi Amie, What brand of all purpose gluten free flour do you use? I have had some trouble finding a brand that works well for me in recipes…and is the stevia liquid or powder? Love your blog and enjoy your recipes. Makes cooking fun and having food intolereances not so burdensome πŸ™‚

    1. Thank you Charlene; I love using Better Batter! http://shop.betterbatter.org/ Their flour is great. Also, I love using NuNaturals Stevia; it’s nice and sweet for baking! Hope that helps have a wonderful day! SO happy to hear you are enjoying my recipes; always happy to help in anyway possible!
