Happy August. I hope everyone had a lovely first week of August. I spent the last week developing over 40 recipes, including these popsicles… oy!

I’m excited to announce that I’m writing for the Food Network along with a few nationwide magazines… so I’ve been busy in my kitchen and photography studio developing recipes, food styling and takin’ pictures.

So fun.

And even thought we had a few rainy days this week – the sunshine is out today and the weekend looks like a beauty.

So, I thought I’d whip up a batch of my extra special n’ naturally sweet Strawberry Basil Green Tea Popsicles.

They’re not like any you’ve ever had before.

I’ve been trying for years to make a healthy, good tasting popsicle…

And I think I’ve finally created it.

They’re quite refreshing. Especially on a sweltering hot August day in Manhattan.

People, I’ve finally come to terms with the fact that I’m not the gal with the sugary sweet recipes everyone is always asking me for. I’m not the type of girl who can make these popsicles with a white tee shirt on because I’ll have popsicle juice dripping down the front.

I’m not the type of gal that works at VOGUE or Ralph Lauren or wears Gucci shoes everyday. Nope. Been there; done that.

If only my old bosses from VOGUE and Ralph Lauren could see me now – they’d think, “Oh, the horror of spending your day in the kitchen in a dirty apron”. They’ll never get it.

I’m not the type of gal who’s out at bars meeting rich, banker men. Hehe.

Nope.

I’m not your typical Manhattan gal. (Well minus the whole clothes thing – I do have to store my clothes in my oven – welcome to a Manhattan apartment. Hey – a girl’s gotta do what a girl’s gotta do, right? Too many sample sales to not be tempted to treat myself once in a blue moon.)

I’m more the type to make a cup of tea and meet some friends in the park for a picnic. I’m the kind of gal who goes for a walk along the water every morning to meditate.

I’m the lil’ blonde who spends her days running around Manhattan as a personal chef to some fabulous people. Cookin’ for them, teachin’ them and preppin’ yummy fresh food for their week.

That’s me.

In a nutshell.

Now, onto my sweet lil’ pretty in pink popsicles. Listen up, kids: these babies are ten times better than those treats from the ice cream truck circling your block. They’re the easiest pops you’ll ever make. That’s right. Just five ingredients and you’re all set. Well, along with the help of your freezer, of course.  Since these babies will start to melt when you take ’em out of the freezer – it’s best to eat ’em up right away and start lickin’. Somehow I don’t think that’ll be a problem for ya.

If you’re a lifelong strawberry lover like my momma, you will adore these summery popsicles as a mid-day snack or an evening treat.

O and I should warn ya. After pouring this pretty pink mixture into the popsicle molds, I had a little spoonful for myself. And it could quite possibly be the world’s best non-alcoholic treat you’ll ever get your hands on. One lick and you’ll get that whole ridiculously sweet fruit flavor you loved as a kid.

Because what’s summer without popsicles?

Here’s to bringin’ back the good ol’ days when we were kids and summer was just a bundle of carefree days of sunshine!

Amen to that.

  1. I read this to my husband, who is not a big fan of herbs and spices. He likes things very plain. πŸ™ His response, ” I don’t know about that.” He loves popsicles and I have been trying to just puree fruit with a little almond milk and a little honey and make them for him so he won’t eat the ones from the freezer at the grocery store filled with stuff we can pronounce. He has been doing pretty good. I am going to try these. They sound so refreshing to me. I think my husband will be surprised! We are slowly changing his taste buds…..one clean food at.a.time!! Thanks for your help. πŸ™‚ .

  2. 4 stars
Hi Amie, your popsicles sound so refreshing! I can’t wait to try them! Although, I don’t have any popsicle molds at the moment. What did you use( the one in this picture)? It looks like an entire tray, but you can take them out individually? I would LOVE that feature.!

    1. Thanks Leslie; great to hear from you! This was a popsicle mold tray from my friend, Kirstin. You can easily pop out the individual popsicles. I’m not sure where she purchased it but I’m sure you can find it online or at Williams Sonoma! Have a great night and enjoy.

  3. Hi I tried these popsicles and could barely taste the basil, even though I blended in 3/4 of a whole plant. I tasted the orange juice the most ironically and the green tea not at all even though I used a matcha concentrate.

    1. I used fresh organic basil right from a farm so you may need to use more if yours is not as flavorful. It all depends on what kind of green tea you use. I like using Yogi tea’s green flavored teas. Thanks!

  4. I’ve been thinking about making popsicles with green tea lately, but haven’t created anything yet. These look absolutely delicious, and with the hot weather we’ve been having here, they would make a great afternoon treat now that my kids are back in school. Can’t wait to make these! Maybe today?!!!

    1. Thank you so much; I hope your kids enjoy them! They’re delish and so refreshing. Let me know how the kids like ’em! Have a great Labor Day!

  5. HI AMIE, THESE SOUND LIKE THEY ARE THE PERFECT DESERT AND VERY REFRESHING. THEY LOOK EASY ENOUGH TO PUT TOGETHER I HAVE BEEN TRYING DIFFERENT THINGS MYSELF FOR DESERTS THAT ARE QUICK AND HEALTHY. I TRIED A BANNANA FREEZE SO GOOD YOU TAKE SEVERAL RIPE BANANAS AND FREEZE IN A BAGGIE, THEN I PUT THEM IN MY BLENDER ON HIGH SPEED THEN ADD 1 OR 2 TABLESPOONS OF ALMOND BUTTER OR PEANUT BUTTER AND MIX THEN FREEZE AND IT IS SO GOOD. BUT I WILL BE MAKING THIS OVER THE WEEKEND WILL LET YOU KNOW. THANKS AGAIN

  6. This sounds like the perfect break from the cookies & cakes that I have been working on lately – a perfect late summer treat. I am so bringing these to a cookout I am going to tomorrow. Thanks for sharing it πŸ™‚

And for all the new writing gigs – congrats dear! I can’t wait to see all these fun new recipes!

  7. Yum! I love the idea of these and would be perfect with August approaching. I love anything with green tea πŸ™‚
