There’s nothing quite like a Sunday morning waffle.

Growing up, my father made us waffles every Sunday- you know – those fluffy, golden-brown, succulent dream-boat waffles that you just want to sink your teeth into and bury in a puddle of syrup.

Waffles were a tradition in our home- they weren’t just for Sunday’s but also for special occasions.

Like the morning I came home after living in London.

And my birthday…

And the days when it was 90 degrees and the neighbors were having a yard sale and there seemed to be nothing better in the world than whipping up a batch of waffles before running over to buy all the trinkets for 25 cents.

Ahhh… waffles remind me of summer. And spring.

So I decided to toss a bit of summer and spring in to this recipe.

How?

Pretty simple.

Fresh mint and a ripe banana always does the trick.

Along with some creamy almond butter, a spread of ricotta cheese and a nice drizzle of local honey.

O and did I mention the pretty powdery cinnamon to top it off?

It doesn’t stop there…we haven’t even gotten to the waffles and I know your mouth is already watering.

These babies are gluten-free and fabulous.

But guess what?

I didn’t make ’em.

Nope.

Not me.

They’re Van’s.

Van’s made ’em and everyone is lovin’ them.

Ya see- the past few months my clients have been RAVING over these Van’s Waffles – I’m sure you’ve seen their cute packaging in Whole Foods Market or your local food store.

Well, they’ve got a nice display front n’ center in my Whole Foods Market and their pretty gluten-free waffles were eyeing me down.  I recommend these to all my clients looking for a hearty waffle when they don’t have time to make the homemade kind- but want the same good ol’ homemade consistency and flavor.

So, I can’t take the credit for these pretty fluffy circles of fun.

But I can take credit for this recipe- and my clients were beyond excited to come over for their appointments this week because I served these Cinnamon n’ Honey Morning Waffles everyday.

They’re not your average frozen waffle- they’re different.

They’re better.

And honestly- my clients and their kids are loving ’em.

Bite by bite.

So, I thought, “Why not have a little fun with your breakfast?”

You can still have fun creating your own masterpiece even if you can’t take credit for creating the waffle, can’t you?

O yes you can.

I just did.

Cinnamon n’ Honey Morning Waffles

Gluten-Free

Serves 1

Ingredients

  • 1 Van’s Gluten-Free Waffle
  • 2 Tbsp. almond butter
  • 1/4 cup Fat-Free Ricotta Cheese
  • 1/2 ripe banana, thinly sliced
  • 1 tsp. honey
  • 1/2 tsp. cinnamon
  • 2  fresh mint leaves

Directions

  1. Toast Van’s waffle in a toaster oven until golden brown.
  2. Place waffle on a plate; top with almond butter, ricotta cheese, banana slices, a drizzle of honey and a sprinkle of cinnamon and fresh mint leaves.
  3. Serve warm.
  4. Enjoy!
