The best time of the year is truly here.
Time for the beach.
The glowing lightning bugs.
The sunny sunshine.
The endless sandy smiles.
The Popsicles.
The boats n’ smell of the salty air on the beach.
Yes, Summer is finally here and it’s delicious.  Time for my cooling gluten-free treats.
As always, a simple, sweet lil’ popsicle.  Naturally gluten-free n’ delicious.
Perfect for your summertime sweet tooth.
I just made them and they’re almost gone…Yep, they’re that good.
Don’t say I didn’t warn you.
Get lickin’…
Strawberry Basil Popsicles
Gluten-Free and Vegan
Makes 6
Ingredients
  • 4 large English cucumbers
  • 1 cup basil
  • 2 cups strawberries
  • 1 cup raspberries
  • 1 cup blueberries
  • 1 tsp cinnamon
  • Juice of 1 large orange
  • 1/2 tsp. orange zest
Directions
  1. Combine all ingredients into a food processor; puree until smooth.
  2. Transfer mixture into Popsicle molds.  Freeze for at least 3 hours.
  3. Enjoy!

  2. yum! found the cukes this morning, and modified it based on the other fruit i had … used mango and raspberry, subbed a grapefruit for the orange, and used half basil half mint so my basil didn’t get entirely clipped :). sipping the leftovers and it’s great, light and fresh! i’d probably peel half the cucumber the next time, these weren’t organic and the skins are a bit bitter. thanks for the recipe!

    summer favorites? popsicles on the porch, sleepy sticky kids, beach trips, late nights with jars of fireflies, smelling the neighbor’s dinners wafting through the window, night breezes, making time for good books, happy letters from my boy at camp, splashing in the backyard pool, fresh herbs on my porch! i could go on … 😉
