Grapefruit Guacamole n’ a Fun Lil’ Giveaway

Right now, I wish I was here. But I’m not…I’m in the 20 degree frigid air of Manhattan.

O well.

At least I have a bowl of fresh guacamole to keep me satisfied and warm in my apartment, while I dream of watching the Oscars.  Here is a tasty lil’ recipe to serve at your Oscar Party since Avocados from Mexico are at their peak of the season right now…they’re extra creamy and perfect for this recipe (and beauty treatments, too…see below, hehe).

A fun spin on the classic guac, as you all know I’m always coming up with a fun new guacamole recipe and this time I decided to branch out and pick up a fresh ruby red grapefruit…it was staring at me this morning at the corner market and I simply couldn’t help myself.

I haven’t had a grapefruit in quite some time, but they always bring me back to my younger years as a kid growing up as my mother would serve my sister and I a half grapefruit every morning before school…it was the best. Why? Well, my fabulous mother would slice each piece so that is was easy to pop out and pop into our mouths.  So, I thought I’d try to incorporate one of my favorite childhood memories into this guacamole.

The result? Amazing. This may just have to be a staple on our table in the summer at the beach house.  What do ‘ya think?

Grapefruit Guacamole

Serves 4

Ingredients

  • 5 ripe Avocados from Mexico, peeled, pitted and sliced
  • 4 cloves garlic, minced
  • 2 Tbsp. fresh lime juice
  • 1 tsp. fresh lime zest
  • 1/2 cup cilantro, chopped
  • 1 cup fresh baby spinach
  • 1/2 cup red onion, chopped
  • 1 large ruby red grapefruit, peeled
  • 1/4 tsp. sea salt
  • 1/4 tsp. freshly ground white pepper

Directions

  1. In a food processor, combine all ingredients. Process until smooth.
  2. Transfer to serving bowl; serve chilled or room temperature as a dip with gluten-free crackers and crudites or a spread on sandwiches, pitas, bagels and salads.

And I leave you today with this amazing story of Graham Kerr, a 76 year old guy who decided to rip out his front lawn and plant a kitchen garden to cook everything he had grown.  Pretty amazing, isn’t it?

The best part of the article that rang true to my heart and really stuck with me is something that I’d love to share with all of you:

I often feel like the only person who doesn’t just love avocados. I would most definitely go for beauty uses rather than food uses ;-)

LOVE AVOCADO’s! I am vegan and I am told I eat weird things…..lol.
I actually used the raw avocado, chop it up by hand so it is a bit chunky, than spoon it on a piece of firm tofu, sprinkle with chia and raw pumkin seeds and top it off with another slice of tofu! Voila! That is my favorite sandwich!

I love eating raw avocado….nice and ripe with a spoon mashed and enjoyed by itself with sea salt n’ pepper…you are not weird as avocado is delicious and very healthy! I like your idea of using it with tofu and chia seeds as well as pumpkin seeds…I’m lovin’ chia seeds ans well and the pumpkin surely would add a nice crunch too. What a beautiful sandwich; I love this idea…Thank you so much; enjoy your Sunday and keep up the yummy recipe ideas! Hope to hear from you again soon and hope you enjoy some of my vegan recipes!

I love to slice avocados and put in a grilled cheese sandwich with a little cheddar, tomato and salt & pepper.
