I am so excited to announce my Taco Night Sweepstakes which starts today!  You can simply submit an original taco, guacamole or salsa recipe using Avocados from Mexico as an ingredient.

There will be one Terrific Taco Winner announced on my blog on November the 1st who will be awarded a $100 iCard.  But that’s only half of it…there is a chance to also win a $25 iCard every Thursday via Twitter, too…You can spread the word for my Taco Night Sweeps via Twitter and Facebook to encourage others to enter.

How exciting is this? I know all of you have some fabulously delicious avocado recipes so get started and whip up a delicious dish to enter my Taco Night sweepstakes.

All recipes should be submitted as a comment in the ‘comments’ section or as a link in the ‘comments’ section of this post.   The sweepstakes is open from today thru October the 29th.

On November 1st, one winner will be chosen using a random number generator software program and then announced on my blog for a $100 iCard.

You can tweet about this contest using the hashtag #taconight and you can also post about the contest on your Facebook page.  Every Thursday night, you can participate in the Twitter promotion by tweeting a photo of your ‘Taco Night’ to @Guacgrl.

The first 5 tweets each Thursday will receive a $25 iCard!

Participation is free and recipes will not be judged.  Limit one entry per person, per blog site.  Recipe submission is not a requirement for entry.

  1. I like guacamole topped with salsa and served with tostitos.
    Here is how I make my guacamole (I think I learned this from Betty Crocker Book) Mix 3 large avacados pitted and peeled, 2 tsp lemon juice, with 1/2 tsp hot sauce continue mixing until consistency is reached.

  2. My favorite recipe is quite simple. just take 2 avocados, add chopped onion, cilantro, tomatoes, a small amount of lime juice, and a bit of sea salt. If you like it spicy, you can add a sliver of habanero pepper (very hot) or jalapeño (mildly hot).

  4. Here’s my favorite recipe for Avocados from Mexico!

    Creamy Guacamole

    2 ripe Avocados from Mexico
    1/4 cup Cream cheese spread
    2 tblsp. Finely chopped onions
    1/4 cup Finely chopped tomatoes
    2 tblsp. Lime Juice
    1 Minced garlic clove
    1/8 teasp. Salt
    1 dash Black Pepper

    Mash the avocados in a medium-sized bowl, then add the remaining ingredients and mix well. Makes 12 2-tablespoon servings.

  5. I do vegetarian tacos
    Zatarans Black Beans and Rice Mix
    Avacados
    Tomato
    Red Pepper Flakes
    Mexican 3 Cheese Shredded Cheese
    Taco shells
    Just cook the black beans and rice as directed on the package and pile on the rest of the ingredients to taste. You can add in any other ingredients you prefer.
    The avacados and tomatoes are good for you, It’s easy, and vegetarians don’t have to miss out on all of the taco goodness. I make them when I make regular meat tacos for my family.

    My recipe:
    1 avocado,
    1/4 c. red onions
    8 cherry tomatoes
    1 lime
    1/4 c. coriander

    Directions: chop avocado and squeeze lime over it. Chop red onions, tomatoes and coriander. Mix everything together.

  7. My recipe is soo easy!
    2 mexican avacados cut up
    2-3 cups grapefruit cut up
    4-5 tbs honey(haet it slightly to toss easier)
    dash salt fresh mint to taste

    just combine all ingredients,toss lightly to coat and..eat!
    I add cold grilled chicken in the summer to make a main dish.

  8. This is a very simple recipe… We usually have it as a side, or a yummy salad.
    2 cut up avacados
    3 cups grapefruit , cut into chunks
    4 -5tbs honey (heat slightly and it wil coat better)
    dash salt
    fresh mint

    Simply combine avacado and grapefruit, drizzle with honey and toss.
    add dash of salt and fresh mint.
    Serve right away.
    The creamy avacado works so well with the tart grapefruit flavor.
    My family loves this.
    I have added cold grilled chicken to make a main dish in the summer.
