Now that the holidays are over perhaps we can move on to our next celebration, shall we?

And before Valentine’s Day rolls around next month, we’ve gotta Super Bowl to watch.

Sliced eggplant about 1/2" thick and 1" tall in a stackWhile ordering my Fresh Direct delivery last week, I couldn’t help but think of what to make for a healthy Super Bowl party. That’s the beauty of food shopping online; it’s quick, it’s easy and it doesn’t take venturing out of your Manhattan apartment into the freezing cold.

Just 1, 2, 3 and it’s done.

Signed, sealed, delivered.

So, what exactly did I order?

A whole lot.

Everything from fresh fiber-filled organic veggies and herbs to fresh shrimp, tofu and beans for some hearty protein.

My favorites? Their organic eggplant, zucchini, mushrooms and of course, their shrimp. I don’t know about you but it’s not so easy to find good shrimp and boy o’ boy did Fresh Direct hit it on the bulls eye. They were tender and delish.

Heck, I even created some fun tiny tacos and a mini pizza with corn tortillas.

Well, not much more fun than I had alone in my kitchen whipping up these 10 tasty recipes.

You’ve got three weeks. That’s right 3 solid weeks to perfect these 10 fun finger food recipes for game day.

So, what are you waiting for?

Stuffed mushrooms with a toasty crunchy top on a serving platterGo ahead, get your practice on and start making some of these babies the games this Sunday.

And since I was inspired by all of these amazing fresh ingredients, I thought I’d lend some of my trusted recipes to you for a lil’ inspiration to get your juices flowing just in time for the big game day.

It may be three long weeks away but I know you’re already wondering what you’ll serve those hungry boys n’ gals crowding around your big ol’ flat screen TV.

  1. Amie –

Your energy is contagious! I fell upon your blog yesterday and cannot stop reading your posts. Thank you so much for posting all the information you have. I have been searching for a blog like this to follow for a long time.

Wishing you all the continued success one can muster.

You are a ray of sunshine!

    Again, thank you.

    Enjoy your day.

    Kind Regards,

    Candace Roberts

    1. Awe; thank you so much Candace. You just MADE my Friday! So kind of you and I greatly appreciate you taking the time to write to me. It seems like everyone tells me that my energy is contagious in person, so it’s funny to hear someone say that you can feel my energy through my blog, too!
Thank you again; have a wonderful weekend and enjoy my recipes.
      xoxo

  2. I love eggplant fries! This is the first time I’ve ever seen them mentioned on the web. I grew up with my mom making these for me because she loved eggplant and the only way I would eat it was in frie form! Fun! Glad to see it mentioned!

    1. Thank you Adina; so great to hear from you. Love the childhood memories; so fun!
Have a great night and hope to hear from you again soon. Enjoy.

    1. Thank you! Hope you enjoy this recipe. Stuffed mushrooms are a favorite especially when they’re gluten-free and healthy! Have a great night and thank you for your comment.

  3. Big congrats on being named one of Bing’s Top Food Blogs! I’m loving all these healthy and delicious super bowl ideas-especially the mini bean buyers and creamy squash guacamole-yum! Love the idea of the food delivery, although it’s not to popular here in San Diego…I was just talking to a friend (new mom) who lives in NYC and is loving food delivery, although she said the only downside is not being able to select her produce. Still, sounds nice to take a break from grocery shopping 🙂

    1. Thank you so much; so great to hear from you. I appreciate your comment about Bing and I am truly honored. These fun football ideas are surely going to be on my plate this year. Living in Manhattan in the winter can be tough for food shopping so Fresh Direct is fabulous but I still love picking out my own food at the market. I agree but it’s a nice time saver. I love San Diego; hope you are having a great New Year so far. Thank you again!

  4. Sounds like a big list of healthy yum! I’m digging the addition of squash to guacamole. Do you just steam until tender? I need to check out Fresh Direct. 🙂

    1. Thank you darling; I love Fresh Direct. I’m actually going to be offering 15% off to all customers soon; hope you enjoy! Have a great day.
